Tiffin
This is the most gorgeous pudding I've ever made. Its really, really nice, completely irresistable and sadly, also extremely fattening. You have to try making it at least once!
Ingredients
200g digestive biscuits
2 large tablespoons of golden syrup
50g margarine
50g walnuts
50g glace cherries
200g chocolate (don't use cooking chocolate.)
15mls milk.
Instructions
- Half fill a large pan with water and put it on the heat.
- Break up half of the chocolate and put it in a large bowl along with the margarine and the syrup.
- Place the bowl above the pan to melt the ingredients.
- Meanwhile cut the cherries into eights (a very sticky job, use scissors)
- Place the biscuits and the walnuts in a processor (blender) and make into crumbs.
- When the chocolate is melted remove the bowl from the pan and stir in all the other ingredients (the disgestives, walnuts and cherries)
- Press the resulting mixture into a 20cm square tin. Or whatever size you like, just remember that this crumbly mixture is the base of your biscuit, so don't make it too thin.
- Wash out your bowl and then melt the remaining chocolate in the same way (only without the syrup or margarine.)
- Add the milk to the melted chocolate, mix well, then spread the warm chocolate over the top of the base.
- Leave to cool, or put it in the fridge. Cut into pieces, and eat!
