Crispy Tuna Pie

I found this one...ok...but I'm not a huge fan of tuna, I'm afraid. Still, like all the others, this is quick to make (had to make it in school cookery lessons)

Ingredients

200g tin of tuna in oil
250mls milk
15g cornflour
2-4 hard boiled eggs
For the topping:
25g plain flour
40g margarine
50g grated cheese
small packet of potato crisps (chips, for those in the US)
5mls mixed herbs (optional)
seasonings

Instructions

  • Preheat oven to gas mark 5 or 190 degrees C

  • Drain oil from tuna into a small saucepan.

  • Add cornflour and blend it into the oil.

  • Blend in the milk slowly, put the saucepan on a gentle heat and bring to the boil, while stirring all the time.

  • Flake tuna and add to sauce, season.

  • Quarter the eggs and arrange in the bottom of an oven-proof dish.

  • Pour sauce over the eggs.

For the topping:

  • Rub fat into the flour.

  • Mix in cheese, crushed crisps, seasonings and herbs.

  • Scatter crumble evenly over the sauce.

  • Bake for 25-30 minutes, until golden brown.

  • Garnish with sliced tomatoes before serving (optional).
