Victoria Sandwich Cake
These cakes are particularly nice as they're nice and light, and not too rich.
Ingredients
150g self raising flour
150g castor sugar
150g margarine
3 eggs (size 3 or 4)
Some jam for the middle
Instructions
- Preheat the oven to gas mark 3 or 170 degrees C
- Grease two sandwich cake tins (tine about 18cm in diameter) and line with greaseproof paper.
- Sieve the flour into a bowl. Then add sugar, margarine and eggs and beat well with a wooden spoon until the mixture is light-coloured and fluffy.
- Divide the mixture between the tins and smooth the top. Bake for 30-40 minutes on the centre shelf of the oven until firm and golden brown.
- Leave to cool and then spread jam over the top of one of the cakes, then stick the other cake on top.
