Cranberry

1 pound fresh cranberries
Sliced and scraped peel of 1/4 orange
Sliced and scraped peel of 1/2 lemon
1 1/2 cups sugar syrup
1 1/2 cups vodka

Wash cranberries and coarsely chop in a blender or food processor. Add all the ingredients to the alcohol. Steep 4 weeks and strain and filter. If more sweetener is required, add more sugar syrup to taste and mature for another week.



Stawberry

3 cups fresh strawberries cut in thirds
3 tablespoons powered sugar
3 cups vodka or rum
1 cup sugar syrup

Remove stems from the berries. Sprinkle powered sugar on berries and let dissolve; then add the alcohol. Steep two weeks. Crush berries through a strainer. Filter. Add syrup and mature for one week. Filter again through a fine cloth and the liqueur is ready to drink. Yields about 5 cups.



Pear

1/2 pound mature ripe pears
2 apples-peels only (any variety)
1 clove
1/2 inch cinnamon stick or a pinch of cinnomom
Pinch nutmeg
2 coriander seeds
1 cup granulated sugar
1 1/2 cups vodka or brandy

Cut pears into strips (do not pare) and place in a jar with all the other dry ingredients including the sugar and apple peels. Add alcohol to cover. Steep 2 weeks, shaking the jar every two days to mix. Strain and filter. Sweeten to taste if not sweet enough and let mature for 2 months.



Plum

1 pound fresh plums, cut up or used whole
3 cloves
1/4 inch piece of cinnamon stick or a pinch of cinnamon
1 cup sugar
2 cups vodka

Place cut up plums and pits or whole plums (pierce skin to pit) in a jar with flavorings, sugar and vodka. Be sure the vodka covers the plums. Steep 3 months, shaking occasionally to mix. Strain. You can than enjoy the fruit as a dessert as it has been sweetened and has a liqueur flavor.
