Tom Yam Soup

The ever tasty Tom Yam soup is an aromatic soup which is rich with coconut milk and intensely flavoured with galangal, lemon grass and kaffir lime leaves.

Ingredients:

750ml coconut milk
475ml chicken stock
4 stalks lemon grass bruised and chopped
2.5cm galangal, thinly sliced
10 black pepper corns crushed
10 kaffir lime leaves , torn
300g boneless chicken, cut into thin strips
115f button mushrooms
50g baby sweetcorn
60ml lime juice
45ml fish sauce
2 red chillies, chopped to garnish
chopped spring onions to garnish
Coriander leaves, to garnish

Procedure:

  1. Bring the coconut milk and chicken stock to the boil.
  2. Add the lemon grass, galgangal, peppercorns and half the kaffir lime leaves, reduce the heat and simmer gently.
  3. Strain the stock into a clean pan.
  4. Return to the heat, then add the chicken, button mushrooms and baby sweet corn.
  5. Cook for about 5-7 minutes or until the chicken is cooked.
  6. Stir in the lime juice, fish sauce to taste and the rest of the lime leaves.
  7. Serve hot, garnished with red chillies, spring onions and coriander.
