- Caldo de
Manguera.- A delicious soup made of pig intestines stuffed with
blood and rice.
- Ceviche.- We use the word ceviche for a
number of seafood dishes prepared in a similar way, usually it consists of
raw (or lightly cooked) shellfish with lemon. Although there is also a
peruvian food called "ceviche", this is a totally different food.
Ecuadorian Ceviche is Different and is original from Here, the only thing
they have in common is the name. My favorites are Concha
Prieta (Black clam, Anadara tuberculosa), Mussel (Mytilus spp.),
Ostión (a small oyster Crassostrea
columbiensis), Ostra ( a big Oyster C.
iridescens), Shrimp (Penaeus
vannamei), Fish (white fleshed
preferably), Lobster (Panilurus spp.),
squid (Loligo spp.), Octopus (Octupus spp.) Churo (a sea -
snail), Red Mangrove Crab (Ulcides occidentalis) etc.
- Encebollado.-
Also known as Languriango, this is a delicious soup made of yellow fin
Tuna (Tunus albacares) and Yuca. It may be the world's best
pick me up for a Hangover.
- Guatita.- This
is cow stomach (librillo, guatita, panza, callos) with potatoes and peanut
sauce. Mmmm! Sounds Delicious , well maybe not, but it sure tastes that way,
believe me, try my quick recipe and tell me later.
- Cangrejo Criollo.- Red Mangrove crab Ulcides
occidentalis, prepared with a special seasoning, and you eat it with
some really good extras and a lot of beer. This crab doesn't taste a bit
like the blue crab (Jaiba or Callinectis sapidus) most of you know.
The taste isn't as delicate, it's more savory. The best thing about a
cangrejada (crab-fest) is too eat it with your friends and start fighting
over who gets the crabs with the biggest claws. Try my special recipe.
- Carapacho
relleno.- Stuffed Crab carapace, It's stuffed with crab meat, bread
and maduro (ripe plaintain) and raisins.
- Bollos de
pescado.- Verde (the same plaintain but green), Peanut and fish,
wrapped in a banana leaf.
- Arroz con
Menestra y carne Asada.- Rice with beans and meat. Eat it with
patacones (thickly sliced unripen plaintain, taken out smashed and fried
again) or chifles (thinly sliced fried unripen plaintain)
- Cazuela.- A dish made with unripen
plaintain, peanuts and fish (or seafood), served in a clay pot.
- Sango de verde.- Made with unripen
plaintain, and shrimp.
- Sango de Choclo.- Made with corn and
shrimp, more delicate than the Sango de verde.
- Locro .- A soup made with potatoes
cheese and milk, (I like it also with corn), eat it with an avocado.
- Caldo de Pata.- A soup made with Pig
foot and mote (a kind of white corn).
- Bandera.- This is not a dish per se but
more a free style combination of several dishes and rice, my favorite
bandera is Guatita, Ceviche de concha, ceviche de camaron and ensalada de
cangrejo (crab salad).
- Banderin.- A small bandera with just 2
dishes (ex: Guata and Concha or Cazuela y Camaron)
- Fritada.- Pork fired in it's own grease
with mote, the recipe is a little different and the taste is WOW!, try it.
- Bolon de
Verde.- A dumpling made with smashed unripened plaintain (verde) and
chicharrón (fried pork skin) or cheese. Drink it with black coffee.
- Caldo de
Bola de verde.- Dumpling soup, made with unripened plaintain
dumplings stuffed with meat and peanut. Difficult to prepare but VERY GOOD.
- Corviches.- Made with unripened
plaintain, peanut and fish, fried.
- Llapingachos.-
Little potatoe pancakes with achiote (a red color seed) stuffed with
cheese, served with chorizos (sausages), eggs, lettuce, avocado and peanut
sauce.
- Empanadas de verde.- Unripened plaintain
empanadas, stuffed with cheese, fried.
- Sanduche de chancho.- A pork sandwich
made with hard crunchy bread, broiled pork leg, Red onion sauce and pork
juice
- Caldo de Cabeza de Bagre.- A Catfish
soup, made with catfish, peanut, yuca and unripened plaintain.
- Sancocho Blanco.- A "White
Soup", it's a meat soup, served with mashed unripened plaintain and red
onion sauce.
- Encoca'o.- Several dishes are called
encoca'o (really it's encocado or cocunuted, but this is a dish from
Esmeraldas, where local black people talk that way and now every one calls
it encoca'o), my favorites are encoca'o 'e pescado (fish), Encoca'o de
camaron (shrimp) , Encoca'o 'e Guariche (Red mangrove crab, called Guariche
in Esmeraldas), Encoca'o 'e Jaiba (blue crab callinectes), and the best
"Encoca'o 'e cangrejo" (Blue mangrove crab, found only in
Esmeraldas). It's a dish made with coconut sauce, really good, try it.
- Caldo de Burra.- Literally it means
"Donkey soup", but it really is fresh water shrimp (Machrobracbium
spp.) soup, with Yuca, verde and peanut. A good Aphrodisiac.
- Fanesca.- A traditional food for "Semana
Santa" from the Sierra (Mountains). It's a soup made with many grains
and Cod.
- Churrasco.- A traditional ecuadorian
dish similar to "Lomo Pobre". It has the same name as Argentina's
barBQ & Chile's stake sandwich, but it's not the same.
- Bien me Sabe.- It means "It tastes
good to me". It's a cocunut dessert.
- Colada morada.- A purple beverage
traditionally made for dead people festivity.
- Cuáker.- Traditional lunch in Guayaquil
must be served with this drink made with Quaker oatmeal and served very
cold.
- Aguacate Relleno.-Stuffed Avocado with
Shrimps
- Arroz con Sombrero.- "Rice with a
Hat", this is the food for the very poor or the very lazy.
- Raspao de Verde.- A typical food of poor people
in Ecuador Coast (Mainly north part)
- Yuca Frita.- Fried Yuca. Makes a great
side dish
- Ostiones.- Small Manrove oysters, raw
with lemon.
