Ingredients:


Stuffed jalapeno's

15 Jalapeno's, cut in half and seeded

  • 1 pint of sour cream
  • 1 package of bacon
  • Toothpicks


  • Fajita's

     
  • Fajita meat (beef skirt steak)
  • 12 oz Beer (preferably high quality)
  • 1 small yellow onion
  • 2 to 3 cloves garlic
  • 3 to 4 seeds from jalapeno's (or whole chopped ones)
  • Worcestershire sauce
  • Steak sauce
  • Paprika
  • Oregeno
  • Vanilla extract
  • 1 Lemon 
  • 1 Lime


  • Mexican Rice

     
  • Rice
  • Tomato sauce
  • Garlic
  • Onion's
  • Pepper
  • Beer
  • Hot sauce (your choice)
  • Picante sauce
  • Worcestershire


  • Homemade Salsa

     
  • 4 fresh chopped jalapeno's (bigger the better)
  • One whole chopped onion (or a half a 1015 onion)
  • 3 cloves very finely chopped garlic
  • 12 oz. of tomato sauce
  • 1 chopped red or green bell pepper
  • Fresh cilantro or spice
  • Cayenne pepper spice
  • 4 oz. tequila
  • 4 oz. vinegar
  • 6 oz. water
  • Flour
  • 1 Lime
  • This is the whole meal (quantity's may vary). 

    Fajita's, Tortillas, Beans, Rice, and the fixing's cheese, lettuce, tomatoes, grilled onions, green peppers, sour cream, guacamole, and salsa.


    The Appetizer. 

    Stuffed Jalapeno's !!
    Take jalapeno's, fill with sour cream or cream cheese, poke a toothpick through the middle, wrap with bacon around toothpick to keep goodies in, then grill until bacon is crisp and done.
    The Main Course.

    Fajita's!

    The Marinade:

    In a sealable container mix beer, chopped onions, diced garlic, jalapeno seeds, 4 Tbs. worcestershire, 3 dashes paprika, 3 dashes oregano, and 2 Tbs. vanilla extract.

    Tenderize fajita meat very thoroughly, sprinkle salt and pepper on both sides. Place in marinade and seal air tight. Place in fridge for a minimum 2 hours (24 recommended), rotating and stirring at least once. 

    The Cooking:

    Cook over a low fire or in a smoker. The slower you cook, the better it will turn out. Keep moist with marinade and/or lemon and lime juice. Then ut on pre-heated grill, until it's sizzling. Eat straight from grill, cutting against the grain. Put in tortilla with your choice of salsa, tomatoes, onions, shredded cheese, chopped lettuce, guacamole, and/or sour cream.

    On the side

    Mexican Rice

    Cook rice until done., Stir in tomato sauce, onion's, garlic, pepper, salsa (to taste), 6 oz of beer, and a splash of Worcestershire. Cook till simmering and sauce thickens. Allow to cool. Add to tortilla's or serve on the side.

    Over Everything

    Homemade Salsa

    In a big pot add chopped vegetables, tequila, vinegar, water, and extra chili peppers if you dare! Bring to fast boil, then let simmer very low for 20 minutes or so. Add cilantro and cayenne pepper. You can add salt and pepper to taste. Let simmer for 4 hours at least, stirring every 20 minutes or so (avoid sticking to the sides). Cool and add fresh lime juice, stirring good. Place on fridge or jar... or best yet, serve warm with the rest of the recipe's!

    Keep in mind these may not be the best are most authentic recipie's around but they are good!
