TEXAS CHILI


1 tbsp whole cumin seeds
1/4 lb. bacon(diced)
2 lbs. beef chuck roast(trimmed & diced)
3 onions(chopped)
8 cloves garlic(minced)
6 fresh jalapenos(chopped)
2 tsp. salt
4 tbsp. chili powder
1 tbsp. ground oregano
1 28 oz. can tomatoes(crushed)

Put cumin in a pan and roast at 375 for 10 minutes. In a large pot, saute bacon until crisp. Add diced meat and brown along with onions, garlic & jalapenos. Add remaining ingredients, bring just to a boil and simmer for 3-4 hrs. Adjust flavor to taste. Beans can be added but.......don't sit near the fire!!!!!!!!!!!!!!!!!!!
