2 cups salt
1 cup dark brown sugar
1/2 c dark corn syrup
2 tbsp whole black peppercorns
2/3 cup fennel seed
1 cup onions(chopped)
1 tbsp lemon rind(grated)
5 tbsp cajun seasoning(optional)
1 wild turkey(about 16 lbs)
Combine all ingredients except turkey into a large pot. Stir until salt and sugar are dissolved. Add turkey and place a large plate over it to keep it submerged. Soak turkey in brine for 36-48 hours(refrigerated). Light your smoker and smoke for 12-15 hours. NOTE:This recipe can be used for any type of poultry.
