5 lb. venison
2 lb fat pork roast,boned
2 Tbl salt
2 Tsp course ground black pepper
2 Tsp RUBBED sage
1 Tbl hot crushed red chile (more or less to taste)
1 Tbl garlic SALT
1 tsp crushed fennel seed
Cube meat and CHILL WELL (to at least 36-38 degrees F.). Grind meats separately. Mix together well and grind again.
Mix dry ingredients and sprinkle evenly over meat. Mix together thoroughly with your hands. Form into rolls an inch and
a half in diameter and 6-8 inches long. Wrap tightly and freeze any that won't be used immediately.Slice 1/4" thick and brown gently for breakfast.
