SMOKED VENISON BREAKFAST SAUSAGE


For 10 pounds of smoked sausage

1 pint ICE water
6 Tbsp salt
1 Tsp ground white pepper
1 Tsp ground ginger
1 Tbsp ground nutmeg
2 Tbsp powdered dextrose (same as glucose if you can't find it)
1 Ttbsp sage
2 LEVEL Tsp Prague Powder #1. YOU MUST USE IT IF YOU SMOKE!!!! 8 lbs lean elk or venison 2 lbs pork or beef fat(FAT ONLY)
