VENISON SAUSAGE


2 lb coarse-ground venison
1 lb bacon(ground)
1 tbsp fennel
2 bay leaves(crushed)
1 tbsp dried parsley
4 cloves garlic(crushed)
1/4 tsp hot red pepper flakes
1/2 tsp salt
1/4 tsp pepper
1/4 cup water

Mix all the ingredients, let stand for 1 hour, and mix again. Stuff into casings or shape into patties. Freeze or grill fresh.
