A TRIBUTE TO RYTEK KUTAS


This page is dedicated to the memory of one of the greatest sausagemakers I have ever known.

Rytek (Richard) Kutas was a renowned sausage maker, a teacher, an advisor and most of all, a friend. Rytek died recently but his legacy of sausage making skills and information lives on.

Rytek started his love of sausage making back in the 1930's. Rytek's parents, Polish immigrants, started him out on his road to sausage making by teaching him to mix the meat and stuff the casings. Each year thereafter, they taught him another aspect of sausage making until he finally reached the point where he could perform all the sausage making tasks, from start to finish.

Rytek's love of sausage making stayed with him as he grew older. He was a professional sausage maker andoperated his own sausage kitchen. Later on, he wrote and published "Great Sausage Recipes and Meat Curing", a book which should be considered every sausage makers bible. Readers comments and questions related to this book ultimately led to his founding of The Sausage Maker, Inc., a well know sausage materials mail order supply company.

I am extremely sorry to lose Rytek Kutas. His memory will live on in the thoughts and "tummys" of all of us who read his book, asked him questions and learned to love the fine art of making wonderful homemade sausages. He will be missed.
