ASSYRIAN LAMB SAUSAGE


3 pounds ground lamb
1 Tbsp salt
1 tsp coarse ground black pepper
1 Tbsp basil leaves, minced fine
1/4 cup pomegranate juice
1 tsp tarragon
Hog casings for stuffing

Mix together all ingredients and stuff into casings. Twist into 5-inch lengths.

You can also probably use this lamb recipe for venison if you add some ground up fat. If you have a nice butcher, he might be willing to share some of his hog casings with you. Good Luck!
