Boy Scout Troop

 

3 Minute Pizza

 

Ingredients

1 pkg. pita bread  
1 can spaghetti sauce  
1 cup grated mozzarella cheese  
1 pkg. sliced pepperoni  
Any other toppings as desired

 Equipment

aluminum foil and spoon

 Instructions;

Cut pita in half and spoon spaghetti sauce into pocket spreading evenly.

Add mozzarella pepperoni and any other "toppings" you wish.  
Wrap in heavy duty foil and place in coals. Cook for 1 1/2 minutes on each side. (You just want it to get warm and to melt the cheese. For really hot coals this is plenty of time.) Serve with salad for a quick meal or it makes a great campfire snack!

American Chop-Suey

 Ingredients

1 to 1 1/2 pound Ground Beef  
1 Large Onion, peeled, cut into slivers  
1 40 ounce can Franco-American spaghetti  
Garlic powder, Salt Pepper

 Equipment

Large skillet, Knife, spoon, can opener

Instructions

Brown ground beef in skillet. Remove beef to bowl. Pour off excess grease, leaving about 2 tablespoons. Brown onions until soft. Add beef, garlic powder, and heat through. Add Spaghetti and spices to taste, simmer at least 5 minutes to let flavors combine.  
Add salad and fresh bread for a "Gourmet meal"

Blue-Ribbon Kielbasa

 Ingredients

2 lb. Kielbasa or smoked sausage  
2 lg. onions  
3 lg. bell peppers  
1 med can pineapple chunks in pineapple juice  
2 tbsp cooking oil Equipment 12" Dutch Oven  
Instructions

Cut onions and peppers into 3/4" wide strips. Sauté until onions start to become clear. Cut Kielbasa in 1" chunks  
and add to onions and peppers. Add pineapple, including juice. Place lid on Dutch Oven. Cook at around 350 deg. for 35 min.

Comment This has won several blue ribbons at camporees.

 

Breakfast Burritos

Ingredients

Tortillas, Eggs, Cheese, Salsa, Potatoes (fresh or canned)

Equipment

Frying pans, stove (camp fire) spatula

Instructions

Scramble eggs, fry potatoes, grate cheese.  
Once everything is cooked, add whatever you want to a tortilla, roll it up and eat it. Comment

It's fast, each person makes it the way he likes it and the only clean up is the frying pans.

 

Chicken in a bucket

Ingredients

whole chicken salt, pepper or other seasonings

Equipment

Aluminum foil, wooden stake, large metal bucket or popcorn tin  
charcoal, shovel pot holders

Instructions

Place a sheet of aluminum foil on the ground. Pound the stake into the ground in the center of the foil. Place the chicken over the stake. Place the bucket/tin over the chicken, making sure that the bucket covers the chicken without touching it. Pile hot coals around the edge of the bucket and up the sides as high as possible (usually about 4 coals high) and on top of it. After about 1 hour to 75 minutes your chicken will be brown and tasty. Comment Oven roasters seem to work the best. 75 minutes cooks a fairly large chicken or turkey breast. Do not try to check part way through the cooking - it just makes a mess!

 

CHOCOLATE CHERRY TO DIE FOR CAKE

Ingredients

2 Regular size cans cherry pie filling  
1 Chocolate cake mix, not the pudding kind.The cheap store brand kind  
Water, Eggs, Butter, Cinnamon a good dash

 
Equipment

Dutch Oven use  12inch  
Charcoal, tongs, etc.  
Foil to line oven

 Instructions

Line the oven with foil, Put the pie filling on the bottom, and add about 1/2 can of water, some dots of butter, and cinnamon,  
Mix the cake mix according to the box directions, and put on top. Bake about 30 to 35 min. Check after 20 min. Done when top is no longer wet.Serve with Ice cream or whipped cream in a can.

Camper's Doughnuts

Ingredients Pre made biscuit dough (in those cylinders that pop)  
Cinnamon and sugar plus cooking Oil

Equipment Deep Pot, Propane Stove, Tongs  
Plate or bowl lined w/paper Towels  
Instructions ~Heat up the oil in the pot  
~Take the dough and make a hole in the middle  
~once the oil gets hot enough CAREFULLY place the dough in the oil  
~let them cook until dark brown on both sides and then remove from the oil  
~place on paper towel lined plate/bowl  
~let cool a little  
~sprinkle cinnamon and sugar on to taste  
ENJOY Comment It is a very good desert but be careful about the oil......it hurts when it touches your skin!!

 

Chuck Wagon Casserole

Ingredients 1 pound lean ground beef
1 can(15 1/2oz)mild chili beans in sauce
1 can(11oz) Mexican style corn (drained)
3/4 cup barbecue sauce
1 package(8 1/2oz) corn muffin mix
1/2 cup of chopped onion
1/2 cup chopped green bell pepper
1/2 teaspoon salt

Equipment Dutch Oven

Instructions   1st. Preheat Dutch Oven over hot coals until a drop of water sizzles.
2nd.  Brown ground beef along with onions and bell peppers in dutch oven.
3rd. Stir in chili beans, barbecue sauce, and salt. Bring to a boil.
4th. prepare corn muffin mix per package directions then stir in corn. Spoon mixture over boiling meat mixxture.
5th. Put Dutch oven lid on. Make sure you have 8-10 charcoal briquettes on the top and 8-10 on under the bottom. Bake for 25 -30 minutes until corn muffin mix is golden brown ( knife comes out clean )
6th. Dish out and enjoy - will feed a patrol of 6.

 

Mountain Mans Breakfast

Ingredients 1 Package of Cheese (whatever kind you would like to use)  
Oil  2 Packages of Hash browns  1 1/2 dozen Eggs 1 jar Of Bacon Bits

Equipment:  Dutch Oven, Tin Foil, Spoon and a A Small pot

Instructions:  Add oil to preheated oven when hot Brown hash browns  
While hash browns are browning mix the eggs and bacon bits in the pot.  
When browns are done add the egg mixture, on top of hash browns to the oven.  
Bake until eggs start to set then add the cheese to top.  
Put lid on and let the cheese melt.

Comment Very little clean up!

 

Coffee Can Stew

Ingredients:   Meat: Bacon + meatballs (ground beef/turkey/sausage or store bought); beef stew meat; or diced chicken breast.
Diced Veggies: potatoes, carrots, green peppers, celery, rutabaga, tomatoes, onions, etc. Various spices. Water.
Oven mitts.

Equipment  Empty coffee can and aluminum foil

Instructions Put some cut up bacon in the bottom of the coffee can, this keeps the rest from sticking. Next layer meat, veggies, and spices until the can is about 3/4 full.
Put in about 1 - 1 1/2 cups water. Cover can tightly with foil. Sit can in hot campfire coals for about 1 hour. NO PEEKING! Use oven mitts to take cans out of the coals. Stir up stew and enjoy! Comment Have everything cut up beforehand and let each person add what they want to their stew. Dinner cooks itself while you find constellations with the kids! This recipe is a lot of fun and has been a favorite of Girl Scouts for years (my Cub Scouts love it too)!

 

Dutch oven chicken

Ingredients 1 large pack of frozen skinless, boneless chicken breast,2 cans cream of mushroom soup, large box of instant rice, 1 pound of bacon and 2 bags of shredded cheddar cheese.

 Equipment 1 med. to large cooking pot,1 large Dutch oven, tongs, a knife and a serving spoon , water, salt and pepper,1 stick butter..

 Instructions   Boil chicken breast until done. Remove chicken and allow to cool. Add rice to water and add butter. Preheat Dutch oven. Cut bacon into small pieces. Dice chicken into small pieces. Layer ingredients as follows. Bacon on bottom, rice next soup and cheese. Continue this until oven is full or you run out of items. Cook about 20 minutes or until done. Comment A little goes a long way. This is very filling. The chicken can be parboiled and cut ahead of time. Just freeze it when you are done for less prep time at your sight. ENJOY!

 

Roasted Corn

Ingredients Fresh ear of corn (1 or 2 each person). Butter, Salt, Pepper and Lemon Salt (or now they make it all together)

Equipment Tin foil (heavy duty best) doubled.
 

Instructions Peel husk down to stem like you would a banana. Remove hair. Put two pat's of butter on corn then re-husk. Roll into
Tin foil and seal ends. Put into hot coals covered for 20 to 25 minutes, remove, open, shake on Lemon pepper salt mixture and enjoy. Be careful, its hot.

Comment Watch out. This has become a traditional addition my scouts insist on even when the cost of fresh corn is high.

 

Darn Goods

Ingredients cooking oil, biscuits or bread dough, and any of several complementary combinations: peanut butter and jelly, chocolate and peanut butter, marshmallows and chocolate, apple and cheese, caramel and apple, ham and cheese, pizza sauce and sausage, ham and egg, etc.

Equipment Camp Stove, Deep Pot, Long-handled tongs or long fork (for removing Darn Goods from pot.)

Instructions Heat the oil. While heating, flatten dough balls on the palm of your hand. Place a spoonful of any complementary ingredients in center of flattened dough. Fold edges of dough together and pinch them closed, creating a sealed pocket. Drop the Darn Good pocket into the oil and leave it until it turns brown. Remove, cool, and eat!

Comment This is a great cooking demo recipe. Let the boys build their own. We sometimes play "Darn Good Roulette" - fill the pot with Darn Goods, but fill one of them with something "undesirable" - like mayonnaise or  mustard. Everyone picks one and has to eat it - even the boy who gets the mayo or mustard!
Of course - don't put anything in that could hurt someone.

 

Sheppard Pie

Ingredients: ground beef one can of corn one can of tomato soup one box of instant mashed potatoes shredded cheese salt pepper

Equipment: Dutch oven, spatula, charcoal, tin foil, pair of gloves

Instructions:   Oil and preheat Dutch oven.  Then brown meat with onion. drain grease then, add tomato soup and corn stir together. While all this is going on have another patrol member make the instant mashed potatoes, using directions on box. Finally, spread potatoes over meat and cook until they have made a "crust" over the meat and corn and the potatoes are starting to pull away from the sides of the Dutch oven.  Finally spread shredded cheese on top of potatoes replace cover and cook an additional 5 to 10 minutes until cheese has melted and turned a golden brown

 

 Dutch Oven Lasagna

Ingredients 1 #10 spaghetti sauce  
5 lbs hamburger  
3 lbs hot sausage  
5 lbs mozzarella cheese  
2 large containers of cottage cheese  
6 eggs  
2 lbs lasagna noodles Equipment 14" Dutch oven  
10" skillet  
large pot Instructions brown meat, drain, set aside  
mix cottage cheese and eggs and set aside  
 
boil noodles  
 
Building the lasagna:  
in layers place meat,cheeses,& noodles  
when dutch oven is about full pour in spaghetti sauce  
put remaining cheese on top  
cover and cook about 45 min on charcoal or hot coals, top & bottom  
serve with garlic bread  
serves about 12 hungry scouts
