Gourmet Goulash
Italian Spaghetti Sauce and Meatballs
Crawfish or Shrimp Fettucini

 

Gourmet Goulash

1 lb. Ground beef
1 cup chopped onion
1 clove garlic
1 tsp. Salt
3 cups (4 Oz.) medium noodles
1 #2 can (2 ½ cups) tomato juice
1 ½ tsp. Worchestershire sauce
1 ½ celery salt
1 tsp. Salt
dash pepper
1 can condensed beef broth
½ cup water
1/3 cup chopped green pepper
1 cup dairy sour cream 

Place beef, onion, garlic & tsp. salt in skillet.
Cook until beef is browned. Add noodles.
Combine next 7 ingredients in mixing bowl.
Pour over noodles. Cover and simmer about 20 minutes stirring occasionally. Add green pepper. Cover and simmer about five minutes.
Stir in sour cream. Heat thoroughly. Serves five or six. Great with a salad and French or Italian bread.

Italian Spaghetti Sauce and Meatballs

Sauce

1 can tomatoes ( Italian style oval)
1 can tomato paste
2 tbs. Olive oil
garlic, salt, pepper
2 cans water

Heat oil in sauce pan. Add garlic and brown slightly. Add strained tomatoes. Bring to a boil. Add can of tomato paste and water. Add salt, pepper and simmer for one hour. Add meat balls, cover and simmer for 30 minutes.

 Meatballs

1 lb. Ground beef
garlic
Meatballs salt, pepper, parsley
3 slices moistened bread
1 egg
Mix above ingredients and form balls.

Brown in hot olive oil and add sauce. Cover and simmer about 30 minutes.

Crawfish or Shrimp Fettucini

3 onions
3 stalks of celery
3 sticks of butter
¼ cup flour
4 tsp. Minced parsley
2 cloves garlic
1 pint half & half milk
3 lbs. crawfish or shrimp
1 lb. Velveta cheese
Grated mozzarella cheese
1 lb. Fettucini egg noodles
Salt and pepper to taste 

Saute first three ingredients in butter. Slowly add flour, cook on low stirring often. Add parsley and crawfish or shrinp. Cook 15 minutes or until red. Stir often. Add  pint half and half, Velvetta cheese, garlic, salt and pepper. Cook 30 minutes. Add cooked noodles. Put in greased dish. Top with mozzarella cheese. Bake at 350 degrees for 15 to 20 minutes, until cheese melts.
