Old Fashion Pineapple Pie
From the kitchen of Lillie Mae Cunningham, my grandmother

Cream together:

1 stick butter
1 ¾ cup sugar
2 tbs. Flour
pinch salt

Beat until well blended. Add (4) four eggs, one at a time.
Stir in one #2 can crushed pineapple, well drained. (about a 10 oz can) Pour into unbaked pie shell. Bake 40 to 45 minutes @ 350 degrees.

Done when knife inserted in center comes out clean.

Southern Pecan Pie

Prepare pastry for one 9” pie pan 

Cream 1/3 cup butter; add gradually ½ firmly packed brown sugar. Cream well.
Blend in 1 cup light corn syrup and 1 tsp. Vanilla; mix thoroughly.
Add:        3 eggs, slightly beaten
               1 cup chopped pecans
Turn:      into pastry lined pie pan 

Bake:      in hot oven (450 degrees) for 10 minutes, then reduce heat to    (350 degrees) for 25 minutes. Pie will test done when tip of knife  is inserted in center of pie and comes out clean.

French Lemon Pie

2½ cups sugar
¼ cup flour
6 eggs 

Beat 6 eggs until light. Sift flour and sugar together, then slowly sift into eggs beating constantly.

Beat the following as listed into first mixture:

1/3 cup lemon juice
1 Tbs. Salt
2/3 cup buttermilk
½ cup melted butter (add last) 

When smooth pour pie shell ¾ full. Place pie into  hot oven @ 375 degrees for (5) five minutes. Remove from oven. Slowly trickle remaining ¼ of pie filling into center of pie.  Return to oven. When top is golden brown, cover with pie tin. Will take about 45 minutes to finish baking. Filling set, but slightly jiggly in center when done.

Pumpkin Pie

Prepare pastry for one-crust pie to fit 9 inch pie pan
Beat 3 eggs slightly
Blend in:

half cup sugar
1 tablespoon flour
half teaspoon salt
half teaspoon nutmeg
half teaspoon allspice
half teaspoon cinnamon

add.....11/2 cups pumpkin, canned

add gradually.....11/2 top milk, heated. (Evaporated milk) one can

Turn into pastry lined pan

Bake in hot oven (450) for 10 minutes then at 350 for 40 to 50 minutes till silver knife inserted in center of pie comes out clean.

This will make two pies in store bought crust.
