Banana Pudding

Banana Pudding

2 Cups Sugar
1/3 cup all purpose flour
41/4 cups milk
6 egg yolks (slightly beaten)
4 Tbls butter
2 Tsps vanilla

In saucepan, combine sugar and flour. Gradually add milk mixing well. Cook and stir over medium heat till mixture thickens and boils. Cook (4) four minutes longer. Remove from heat. Stir small amount of hot mixture into slightly beaten egg yolks. Immediately return to hot mixture (stirring constantly) and cook (4) four minutes longer. Remove from heat. Add (4) four tablespoons of butter and (2) two teaspoons vanilla. Stirring till butter is melted and mixture is smooth.
Line large cake pan with vanilla wafers. Bottom of wafers facing up. Cover with sliced bananas. Then pour half of pudding on top. Repeat vanilla wafers and bananas. Cover with remaining pudding. Cover with meringue and brown in oven 350 degrees. 

Meringue 

6 egg whites
½ tsp salt
12 tbls sugar
1 tsp vanilla

Beat egg whites with salt till frothy. Add sugar (1) one tablespoon at a time and beat well. When meringue forms stiff peaks it is ready to add vanilla. Stir until mixed well. Put on top of banana pudding and brown in oven.
