Nanaimo Bars
Nanaimo Bars are a regional dish (snack) popular on the West Coast of Canada. They are usually served at Christmas time because they are rather expensive to make. Please do NOT subsitute margarine for butter in this recipe!!!!!
Base Layer:
Melt 2 squares of Semi-Sweet Chocolate over hot water. Combine with 1/2 cup softened butter, 2 tablespoons sugar, 1 teaspoon vanilla and 1 egg. Mix well. Add 2 cups graham wafer crumbs, 1 cup Coconut and 1/2 cup chopped walnuts. Mix well. Press into a 9 inch square pan. Chill.
Filling:
Combine 2 tablespoons Custard Powder with 3 tablespoons milk. Add to 1/4 cup butter. Beat in 2 cups of icing sugar until smooth. Spread over base. Chill 15 minutes.
Glaze:
Melt 3 square Semi-Sweet Chocolate with 1 tablespoon butter over hot water. Spread over custard base. Chill 15 minutes.
Nanaimo Bars freeze very well, you can make them ahead of them but do serve at room temperature to get best flavour. To Print this page just hit FILE, then PRINT and that will send it to your printer.
