Lentil Soup
1 can (15-oz) of Progresso Lentil Soup | 1 can (~8-oz) of spinach | cut up cubes of block swiss cheese |
Heat up soup, add can of spinach. When done, serve in bowls with cubes of swiss cheese on top. Makes ~2 servings.
Main Dishes
Delicious Vegetarian Chile
1 large chopped onion | ~2 cloves pressed garlic | 2 Tbsp. olive oil |
1 chopped green pepper | 1 can (15 oz) stewed tomatoes | 1 can (15 oz) tomato sauce | 1 can (15 oz) kidney beans | ~5 oz sweet corn | 1 can (~10 oz) black eyed peas or pinto beans |
4 tsp. chile powder | 1/2 tsp. cumin | pinch(es) cayenne pepper as desired |
1/2 cup dry TVP* soaked in 1 cup water for 15 min. | ~1-2 Tbsp. of chile sauce for added zest (optional) |
Fry onions in hot oil using a large skillet, & after ~5 min. add garlic & cook until onions are lightly browned. Add all remaining ingredients, cover, & cook over medium heat until all flavors are well blended, about 1/2 hr or so.
*TVP (textured vegetable protein) is a granulated soybean product which provides a convenient source of protein & texture. When added to a recipe it resembles ground meat in texture & appearance. When you add water with twice its volume & allow it to soak for 15 min, the volume will double. It can be bought in stores that have sections of vegetarian foods or in whole foods stores, as well as health food stores.
Pasta Bow "macaroni"
~2 1/2 cups of pasta bows | ~1 1/2 cans (15-oz cans) tomato sauce | 1 can (15-oz) vegetable broth (like Swansons) |
~5 carrots thinly sliced | 1 brocolli crown separated into flowerettes or 1 pkg of frozen brocolli | ~5 celery stalks sliced |
1 medium onion halved & sliced | 1 vegetable boullion cube | ~3 Tbsp margarine |
1 Tbsp soy sauce | salt & pepper |
Heat up large fry pan, melt margarine, add onion & celery pieces, cook & stir about 10 min; then add tomato sauce, vegetable broth, continue heating; break in boullion cube; add carrots, cook 10-15 min. (til carrots are almost done) then add soy sauce, salt & pepper to taste.
While above mixture is cooking, in 2 separate pots boil water & add brocolli & pasta bows. When done, add brocolli to mixture in pan. Lastly, add pasta bows to this mixture. No. of servings is 4.
Crispy Potato Wedges
potatoes (with skins) cut into wedges | ~2 Tbsp. olive oil | 1/4 tsp. black pepper |
1/4 tsp. salt | ~2+ cloves minced garlic |
After potatoes are washed & scrubbed with a vegetable brush, cut into wedges. Place in bowl of cold water for 15 min. Preheat oven to 400 degrees & put some oil on a nonstick baking sheet. Drain potatoes & pat them dry with paper towels. Put them in a large bowl & sprinkle with oil, salt & pepper. Place them in a single layer on the prepared baking sheet. Bake them for 20 min., using a spatula turn them over & sprinkle with garlic & bake about 20 more min. or until golden brown.
Serving Suggestion: Serve with a veggieburger on a bun with lettuce & tomato & pickle slice, or with Morningstar's breaded (meatless) "buffalo wings" found in the frozen foods section of your grocery store. Serve with ketchup on the side for dipping.
Salads
Taco Bean Salad
1 can (15-oz) black eyed peas | chopped cucumber | chopped lettuce |
chopped green pepper | chopped onion | chopped tomato |
taco dressing or sauce | salsa optional | Fritos |
Heat and cool the black eyed peas & combine with chopped veggies, toss with taco dressing or sauce. Before serving add Fritos & can also top with salsa, if desired.
Desserts
Banana Cake
1/2 cup margarine | 1/2 cup white sugar | 1/2 cup brown sugar |
2 eggs separated | 1/2 cup milk | 1 cup mashed bananas |
1 1/2 cups sifted flour | 1/2 tsp salt | 1 1/2 tsp baking soda |
1/2 cup chopped walnuts | Cool whip | 1 banana sliced |
Cream margarine & sugar together, add egg yolks & continue beating. Add milk & mashed bananas; flour, salt, & soda (which have been sifted together), then add nuts. Using lower speed on mixer, fold in stiffly beaten egg whites. Bake in greased 8"x12" pan in 350 degree oven for 45 minutes. After cooled, frost with Cool Whip, dotted with banana slices.
Fruit Cocktail
1 large can Del Monte Lite Fruit Cocktail | ~1 cup of miniature marshmellows | sliced banana |
Mix fruit cocktail with miniature marshmellows, refrigerate, & before serving, add sliced banana(s).
