Beef Fajitas
1) 2 cloves minced garlic
1 red onion sliced thin
Cut beef into strips, then combine ingredients 1 through 4 and marinate beef overnight with mixture. Spray frying pan with non-stick spray and cook beef until almost done, then set aside. Spray another pan with non-stick spray and sauté peppers and onions just enough so they are still a little crisp. Add beef and cook for additional 5 minutes or until thoroughly cooked to your taste. I personally like a little crispness to my vegetables. Add lime juice to the mixture then assemble into tortilla shells adding 1 tablespoon each of the salsa and sour cream...enjoy!!
2) ½ teaspoon cumin
3) ¾ teaspoon chili powder
8 tablespoons nonfat sour cream
4) ½ teaspoon Worcestershire sauce
8 tablespoons salsa
2 med size red peppers - cut into strips
8 tortillas
4 tablespoons lime juice
2 med size green peppers - cut into strips
16 oz lean beef (any "round" meat - top, bottom, or sirloin)
Servings - 8, calories - 183, protein - 18.5 grams (40.5%), carbs - 15.2 grams (33%), fat - 5.1 grams (25%). 
Beef or Chicken Cacciatore
½ cup white wine
1 medium green pepper - cut into strips
Sautee chicken (or beef) strips in pan with non-stick spray. Cook until almost done. Add white wine, vegetables, and tomatoes. Cook at low heat for approximately 30 minutes. Serve over 1 cup of cooked pasta [Blood type A - artichoke, type AB - semolina or spinach, type B - semolina or spinach, type O - artichoke pasta]. Then top it off with Antonio's Italian Spice (see below).

1 medium red pepper - cut into strips
2 garlic cloves - finely chopped
2 cups sliced mushrooms
1 ½ lbs chicken breasts or lean beef (as above) cut into strips
salt and pepper to taste
2 teaspoons Antonio's Italian spice - (1 cup fresh chopped basil, ¼ cup oregano, 1 tablespoon salt, 1 tablespoon black pepper, 2 teaspoons crushed red hot peppers, ¼ cup chopped fresh parsley, store in refrigerator and use as needed)
Servings - 4, calories - 405, protein - 45 (46.8%), carbohydrates - 39.5 (41%), fat - 5.2 (12.1%) [chicken]
Calories - 471, protein - 44 (39%), carbohydrates - 39.5 (35%), fat - 13 (26%) [beef]
