Sweet Buns

1 Heat the milk to lukewarm.

2 Crumble the yeast into the milk and blend.

3 Add the egg, salt, sugar and cardamom. Gradually add the flour and softened margarine into the liquid. Knead until the dough doesn’t stick to your hands anymore.

4 Cover with a cloth and leave to rise for 20-30 minutes.

5 Place the dough on a clean, floured table. Form it into a bar and divide into 20 parts of equal size.

6 Shape into buns and place on a baking sheet. Cover and allow to rise for 10-15 minutes.

7 Brush the buns with beaten egg and sprinkle them with caster sugar.

8 Bake at 225 C, on the middle oven rack, for 10-15 minutes.

The same kind of dough is used in making rahkapiirakat, baba and laskiaispullat, sweet buns filled with jam and cream, eaten on Shrove Tuesday.
