TEX-MEX MAC 'N CHEESE serves 4 1 lb ground beef OR ground turkey 1 chopped bell pepper 1 chopped onion 1/2 c sliced mushrooms 1 can tomato paste 1/2 c water 1 can whole kernel corn undrained Seasonings as desired 1 box macaroni and cheese OR cheese and shells
Brown the ground beef or turkey with the chopped pepper, onion and mushrooms. Stir in the tomato paste and water and corn. Cook the macaroni and cheese according to package directions, adding milk and margarine if required. Add the macaroni and cheese to the beef mixture. Mix well and serve.
LAYERED SPAGHETTI BAKE Serves 8 - 10 1 lb. Ground Beef 1/2 cup Green Peppers, chopped 1/2 cup Onion, chopped 1/2 cup Mayonnaise 16 oz Spaghetti Sauce 1/4 cup Parmesan Cheese 7-oz package Spaghetti, cooked and drained 1 cup Cheddar Cheese, grated
Lightly butter a 2-quart casserole dish and set aside. In a skillet over medium heat, brown the ground beef with the chopped pepper and onions. Drain off excess fat. Add mayonnaise, spaghetti sauce and parmesan cheese to the skillet. Cook 2 - 3 minutes over low heat to warm the mixture through. Meanwhile prepare the spaghetti. Place half of itin the bottom of the casserole dish. Pour half of the meat and sauce mixture over the pasta and sprinkle with half of the grated cheddar cheese. Repeat for the second, top layer. Bake at 350 for 30 minutes. Serve with salad and bread.
ONE SKILLET BREAKFAST Serves 8 5 cups Hash Brown Potatoes 2 cups cooked Ham, cubed 1/2 cup Onion, chopped 1/2 cup Green Bell Pepper, chopped 4 Tbs oil divided 8 large eggs, beaten
Warm 2 tbs the oil in a skillet over medium-high heat. Reduce heat to medium and sauté the hash brown potatoes, ham, onion and green pepper 10 - 15 minutes or until golden brown, turning the mixture frequently as it cooks. Remove the golden mixture from the skillet. Add the remaining 2 tbs of oil to warm. Return potatoes and ham to the skillet and add the eggs. Stir until eggs are scrambled.
BASIC PIZZA DOUGH Mix 1 c water, 1 pkg yeast. Add 1 tb oil. Stir in enough flour to make a stiff dough, 1/2 c at a time. Set 30 minutes, roll out. Freezeable. Or add to an English muffin pizza sauce, Mozarella cheese, toppings.

CRANBERRY STUFFING 1 can chicken broth 14oz, 1 3/4 cups 1/2 cup chopped celery 1/2 cup cranberries 1 small onion, 1/4 cup, chopped 4 cups stuffing mix
Mix over high heat, to boil. Cover, cook over low heat 5 minutes or until vegetables are tender. Add stuffing mix, mix. Serves 5.
