East Texas Easy Chili
1 lb ground chuck...not that ol' fatty stuff...CHUCK ONLY
1 can of Ranch Style Beans
Brown meat in a cast iron skillet, u really need this type of skillet to get the metal taste...season with salt, pepper, and either garlic powder or garlic salt to taste..you know which one you use
Drain fat...
Pour in beans and mix...important step, add peppers if you like it hot!
serve with buttered bread...and gas X...another important step
serves party of 4 medium sized people...if you are large or x-large..serves less

Country Style Ribs
Buy 6 lean cut country style ribs...season with salt, pepper, touch of garlic powder.
In skillet, brown until golden brown....on both sides. I usually don't put oil in the skillet...just Pam it.
Pour enough water into the skillet to completely cover ribs...place lid on skillet...let simmer until water cooks down to 1/2. Add 1/2 to 1 cup of BBQ sauce...depending on how spicy you prefer.
Add enough water to almost cover ribs. Let it boil down again until 1/2. If you feel like it is taking too long, then take the lid off. Should take about an hour for whole process.
Test ribs for tenderness. If they are tender, then they are done.
Serve with mashed potatoes and green beans...not a requirement.
The Easiest Enchilada Cassarole in the World!
1-10 oz can of Rotel diced tomatoes, 1-10 3/4 oz can of Campbell's cream of mushroom soup (may use low sodium brand), 1-15 oz can of Ranch Style Beans, (may use jalepeno Ranch Style Beans), 6 corn tortilla's, 1 lb ground chuck
Brown ground chuck in skillet, season with salt, pepper and garlic powder, drain
mix browned meat, Rotel, beans, and cream of mushroom soup in a large bowl
Layer: start with mixture..cover bottom of cassarole dish
Then place 2 corn tortilla's side by side on top of mixture
End with mixture on top...may put cheese on top and/or in layers of cassarole
Place dish in pre-heated oven at 350degrees for 25-30 minutes.
Old Fashioned Hot Cocoa
Mix 2 heaping tsp. sugar and 1 heaping tsp. unsweetened cocoa powder in microwave safe mug.
Stir in 1 tablespoon of milk and mix until smooth! THEN add 3/4 c. of milk.
Heat on high for 1 1/2 - 2 minutes.
Serve hot with whipped cream or marshmallows
To mix in large quantities: Mix 3 x sugar vs. cocoa
The State Cookie of Oklahoma
2/3 c brown sugar: packed, 2/3 c butter or margarine: softened, 1 egg, 1/4 c honey, 1 tsp vanilla, 1 1/2 c all-purpose flour, 1 1/2 tsp baking soda, 3/4 cinnamon, 1/2 tsp salt, 2 c quick or old fashioned oatmeal, 3/4 c chopped pecans: toasted, optional: toasted pecan halves
In mixer bow, beat sugar and butter till light. Add egg, honey and vanilla: beat till light and fluffy.
Stir together flour, soda, cinnamon, and salt. Stir into beaten mixture, blending well. Stir in oats and chopped pecans.
Press cookie dough into a foil-lined state cookie pan, decorate with pecan halve.
Bake at 350 degrees for 20-25 minutes or till slightly firm and golden.
Let cool in the pan for about 10-15 minutes before lifting out of the pan.
Place on serving platter. Makes 1 Oklahoma cookie.
TEXAS STATE COOKIE!!
1/4 c ( 1/2 stick) butter: softened, 1/4 c margarine, softened, 1/2 c dark brown sugar, 1/2 c granulated sugar, 1 large egg, 1 tbs milk, 1 tsp vanilla, 1 c all-purpose flour, 1/2 tsp baking powder, 1/2 tsp baking soda, 11/2 tsp salt, 1 1/4 c 3 minute oatmeal, 1/2 c semi-sweet chocolate chunks, 1 c couarsely chopped pecans: toasted, 1 c flaked coconut
IN large mixer bowl, cream butter, margarine and sugars. Add egg, milk and vanilla and beat till light and fluffy.
In medium bowl, stir together flour, baking powder, baking soda, salt, and oats. Add to creamed mixture and mix till blended.
Stir in chocolate chunks, pecans and coconut. Line Texas-shaped cookie pan with aluminum foil, spread cookie dough over whole pan, pressing to flatten to about 1/2 " thick.
BAke in a 350 degrees oven for 22-28 minutes. The top of the cookie will still be slightly soft and moist, but will finish baking while still in the pan. Allow to set in pan for 10-15 minutes.
Remove from pan, lifting out with help of foil. Remove to wire rack to cool completely.
Decorate as desired...makes one GIANT TEXAS COOKIE...everything is bigger in Texas!
