FRESH FRUIT SALAD

There is nothing better than cold fruit during a HOT summer day. We love to chill a large Watermelon and cut it open on the picnic table. For a easy fruit salad mix any or all of the following fruits.
Watermelon - scoop into ball shapes for fun
Cantalope - scoop into ball shapes for fun
Peaches, Pears, Apples, Bananas, & Pineapple.

Squeeze the juice of 1 Orange over the fruit mixture and Toss.

GLAZED STRAWBERRY PIE

3/4 cup strawberry jelly
2 tablespoons cassis or strawberry juice
1 1/2 pints (6 cups) Strawberries, hulled
1 prepared 9 inch graham cracker pie crust
1 cup whipped cream

1. In a small saucepan cook jelly with cassis over medium heat, stirring until jelly melts, about 1 minute.
2. Arrange strawberries pointed ends up close together in pie shell. Brush berries with glaze.
3. Refrigerate until glaze begins to set, at least 15 minutes or up to 4 hours. Cut into slices and serve topped with whipped cream.

Ice Cream Cone Cake

This is a simple and fun cake to make for a hot afternoon. Kids love it!

Make 2 box cakes. Add 4 cups of batter in a glass bowl for the ice cream top. Add the remainder of the batter in a 9"x13" pan. After the cake is cooked cut the cake in a triangle to look like an ice cream cone. Add the round cake for the ice cream top. Ice with light brown iciing for the cone, white iciing for the ice cream and top with dark chocolate iciing for the fudge on top of the ice cream. Add sprinkles and a cherry on top.
(An idea for the cake left over after cutting out the cone ~ cut cake in pieces and add pudding on top. Top with whip cream.)
