Emily particularly enjoys conducting private classes and participates as guest chef at regional/local cooking schools in and around Santa Fe.

As Emily continues her love affair with all things Southeast Asian, this new class will take us to the Thai Street Food stalls that can be found on countless city streets, market squares, roadside drive-ins, harbor walls and railway platforms across the country. Our menu for today will include: Pork Satay with Spicy Peanut Dipping Sauce, Golden Beggar Purses, Shrimp Spring Rolls, Thai Marinated Chicken with Sweet Chile Sauce, Thai Fried Noodles with Shrimp, and Steamed Sticky Rice & Banana Parcels.

Suffering from post-holiday menus? Join Emily as she shows us how to utilize our stocked pantry. Our eclectic menu tonight includes: Lentil Puree with Pita Crisps, Pasta with Pumpkin, Pine Nuts and Sage Brown Butter, Cumin Sautéed Fish & Crispy Capers, Lemon Scented Roasted Asparagus, and Pear & Almond Galletes for dessert. Simple yet gourmet!

Deep in Southern Mexico lies a magical place that some food aficionados consider the "stomach of Mexico. Having just returned from the capital city of Oaxaca, Emily will walk us through Salsa El Topil, Chipotle Pecan Soup, Poached Shrimp in Pipian Verde, Mole Coloradito with Roasted Pork Tenderloin, Mexican Sweet Cinnamon Rice, Zucchini with Toasted Garlic and Lime, and Coconut Flan.


"ITALY IN SMALL BITES"

Merende. which are midafternoon snacks, enjoyed by Italians all over the country, can be as simple as onion frittata or artichoke tart, a puree of fava beans or sweet peppers mounded on a slice of rustic country bread. These bite-sized treats are the soul food of Italy. Tonight Emily will assist us in preparing: Little Bites of Marinated Mozzarella, Celery and Walnuts, Crispy Olive-and-Herb-Filled Focaccia Spicy Roman Bruschetta, Mixed Herb & Artichoke Frittata, Pasta with Tuscan Pesto, and Tuscan Orange-Flavored Almond Biscotti.


"WINTER SOUPS AND SANDWICHES"

A hot soup and flavorful sandwich is the perfect meal in front of a cozy fire during these long winter months. Emily Swantner will show us how to prepare: Fall Squash Soup with Chorizo & Spicy Cinnamon Croutons, Bistro Potato Soup with Black Olive Tapenade, Winter Spiced Cream of Tomato Soup, Roasted Sweet Pepper Sandwich with Basil Puree, and Grilled Three-Cheese & Ham Sandwich with Garlic Herb Spread.

Once again, Emily brings us a new Paella menu for all you Paella lovers. We will focus on Spain’s Northeastern Catalan-Style Paella, which concentrates on pork products and artichokes. The menu: Serrano Ham Crostini, Tuna and Watercress Salad, Catalan-Style Paella with Cilantro Mayonnaise, Sautéed Asparagus in Almond and Cumin Sauce, and for dessert, Oranges in Honey and Olive Oil.


"PASTA, ETC., WITH CHRISTINE HICKMAN"

For those of you who want to take the fear out of handmade pasta, Christine Hickman returns, once again, from Italy to teach us the in’s and out’s of two of her favorite handmade pastas and sauces. So, roll up your sleeves and get out the Vino Rosso as we prepare: Artichoke and Olive Pate with Crostini, Asparagus, Parmigiano and Pistachio Salad, Egg Fettuccini with Fried Basil, Garlic and Caper Sauce, Strozzapretti with Red Bell Pepper, Pancetta and Parsley Sauce, and the grand finale, Chocolate Olive Oil Cake with Caramel Cream.

Sauces and salsas spice up simply prepared dishes. Emily Swantner will show us how to bring a little spice to your life with: Roasted Tomatillo Avocado Salsa, Seafood Salsa, Mango, Roasted Corn and Jicama Salsa, Velarde Valley Apple Chile Sauce with Smoked Pork Tenderloin, Ancho Sun-Dried Cherry BBQ Sauce with Emily’s Southwestern All-‘Round Rubbed Chicken Breasts and Shrimp p in Red Escabeche.
