Lunch of the Month: The Pizza Lunchable

Fruit Salad of orange slices and canned pineapple

Fresh grapes

Tortilla, cut into squares

Soy cheese, cut into squares

Dip container of tomato sauce

Homemade oatmeal balls

Recipe: Homemade Oatmeal Balls

2 spoonfuls peanut butter or other nut butter
1 spoonful honey
Quick oats, to taste (approx. 1/4 cup)
Maple or coconut flakes (optional)

Melt the nut butter and honey in microwave for about 30 seconds, stir well. Add in the oats in small handfuls, stirring, until balls form desired consistency and can be easily handled. Wet hands, form into tight balls. Roll in maple or coconut flakes if desired. Chill for at least 10 minutes and enjoy!
