Just about everywhere except America, cider means an alcoholic drink made from fermented apple juice. In America, this is usually referred to as 'hard cider', and plain 'cider' can mean an unfermented apple drink, usually distinguished from 'apple juice' by being unfiltered, unpasteurised, and oxidised (gone brown), where 'apple juice' is normally filtered, pasteurised, and yellow. There is no official designation, however, so the terms 'cider' and 'juice' will often be interchangeable depending on market appeal and producers policies. |
