Spinach Bisque
INGREDIENTS:
2 cans chicken broth
3 packages chopped spinach
2 T chopped onions
4 T corn starch
4 T butter
16 oz. Velveeta
1 cup cheddar cheese
1/4 cup parmesan
1 pint half and half
dash of nutmeg
pinch of salt
dash of pepper
DIRECTIONS:
Cook spinach in chicken broth.
Saute onion in butter.
Blend cornstarch into onions and then add to spinach.
Add cheeses and half and half to spinach mix and spices.
Heat through.
