Pizza Crust

1 cup warm water
1 package active dry yeast (2 1/4 tsp)
3 cups all-purpose flour -- might not use all
2 tablespoons olive oil
1/2 teaspoon salt

1. Combine the water, yeast and 1 1/2 cups of the flour in a large bowl. Mix
well add the oil, salt, and remaining flour. With your hands or a large wooden
spoon, work the ingredients together until the dough holds its shape. (You may
need a bit less flour, so add the last half gradually.)
2. Place the dough on a lightly floured surface and knead until it is smooth
and elastic, 5 min. If the dough becomes sticky while you are kneading it
sprinkle a bit more flour over it.
3. Transfer dough to a lightly oiled bowl. Cover the bowl with plastic wrap
and let the dough rest until it has doubled in size. 1 hour.

4. When the dough has risen, place it on a lightly floured usrface, divide it
into two or more parts (see notes) and roll them into balls. Cover them with a
towel and let rest for 15 to 20 minutes. The dough is now ready to be shapped,
topped and cooked. Or if you want to make blanks go to step 6.

5. Cook in a 400 degree oven for 15-20 minutes depending on your taste.

6. To make a blank (ready to top slightly cooked crust) Shape and without toppings put in oven for 8 minutes at 400 degrees. Pull out and let cool then you can either top when cooled and freeze ready to reheat OR you can just wrap and freeze and top when you are ready to serve. No need to thaw just throw in a 400 degree oven until browned the way you like it.

Spinach Strawberry Salad

1 bunch Spinach Fresh -- Washed and dried
1 quart strawberries -- halved
1 2 oz. pkg slivered almonds
1 2.25 oz. pkg sliced almonds
Poppy Seed Dressing:
1/2 cup sugar
1/4 cup cider vinegar
1/4 teaspoon paprika
1/4 teaspoon worcestershire sauce
1/2 cup vegetable oil
1 tablespoon poppy seeds

Wash and Dry spinach-add strawberries and almonds

Dressing- combine first five ingredients in blender. ( I leave out the onions,
to much bother for 1 1/2 teaspoon of onion) Process for 30 sec. scrape sides
and blend at high and gradually add oil. Stir in Poppy Seeds with spoon.

Toss salad with dressing or let each person top their own salad.
