BBQ Chicken
1 lb boneless, skinless chicken breasts (washed and dried)
1 to 1 1/2 cups any BBQ sauce
One onion, cut up
Place chicken pieces in crockpot. Cut up onion over chicken. Pour BBQ sauce on top. Cook on high for 3-4 hours. Remove cover, cut or "pull" chicken apart. Turn to low and cook up to 6 more hours!
The absolute EASIEST recipe!! Need more? Just add more chicken and more BBQ sauce!
Italian Beef
3 lb beef roast (London broil is my favorite)
One package of Italian Seasonings dressing
One can of room temperature beer
Preheat oven to 350-375 degrees. Sprinkle the Italian seasoning on meat and rub in. Place beef in a cooking bag. Pour beer in bag and fasten. Cut two or three small slits in the bag. Place in a roasting pan. Bake for 2-3 hours, depending on desired doneness.
This is sooo good! The leftovers (if there are any!) are excellent for beef 'n noodles later in the week!
Anthony's Mouthwatering Meatballs
In a large bowl, combine 1/2 lb each ground beef, pork and veal, one egg 2 cloves minced garlic 1/4 cup grated romano cheese, 1/4 cup chopped fresh parsley, 3 slices white bread (pulled apart and tossed with 2 tbsp water - that's the secret!), and 1/4 tsp each salt and pepper. Mix well. Add 1/4 cup dry breadcrumbs. Mix again and form into balls. Heat 1/4 inch Crisco Natural Blend in a large frying pan. Add meatballs in a single layer and cook at medium-high heat for 4 minutes. Flip. Cook 4-6 minutes more (until done). Drain in a paper towel-lined bowl. Mangia!
