
Sausage-Vegetable Skillet
| 1 tablespoon butter | 1 lb. kielbasa sausage, cut into 1/2 | 
| 1 head cauliflower, broken into flower | inch slices. | 
| 3 zucchini, thinly sliced | 3 carrots, scraped and thinly sliced | 
| 1/2 teaspoon salt | 1/4 teaspoon pepper | 
| 1 cup shredded monterey jack cheese | 1 medium onion, thinly sliced | 
Melt
Melt butter in a 12-inch skillet over medium high heat; add sausage, and cook until browned, stirring often. Remove with a slotted spoon, reserving drippings in skillet; set sausage aside.
Add
Add cauliflower, zucchini, carrots and onion to skillet; cook, stirring constantly, 5 minutes or until crisp-tender. Stir in salt and pepper; cover, reduce heat, and simmer 5 minutes. Stir in sausage; cook just until thoroughly heated.
Spoon
Spoon mixture into individual baking dishes, and sprinkle with cheese. Cover and let stand until cheese melts. yield: 6 servings.
