In this particular section, I won't assign a specific part of the country as being the origin of the recipe.

Deviled Crab



 ½ c finely chopped celery               cooked, or the canned variety,
 1/3 c finely chopped green pepper       thoroughly drained
 ½ c thinly sliced scallions,         1¾ c coarsely crushed soda crackers
   including about an inch of the      ½ tsp salt 
   green stems                         ½ tsp dry mustard
 ¼ c finely chopped parsley            Tabasco
 1 pound lump crab meat, freshly       ¼ c heavy cream
                                       ¾ c melted butter
                          -----------------------------
Preheat the oven to 350°. In a large mixing bowl, combine the celery, green pepper, scallions, parsley, crab meat (with all cartilage removed), 1½ c of the crushed crackers, salt, mustard, a few drops of Tabasco, the cream and ½ c of the melted butter. Mix together gently but thoroughly with a large spoon, and taste for seasoning.

Spoon the mixture into a buttered 1½-quart casserole and sprinkle the remaining cracker crumbs over the top. Dribble over it the remaining butter and bake the casserole in the upper third of the oven for about ½ hour, or until the crumbs are golden brown. Serve at once, directly from the casserole. Serves 4.
