In this particular section, I won't assign a specific part of the country as being the origin of the recipe.

Scalloped Clams



1½ c freshly shucked and minced clams,    Freshly ground black pepper
   or canned minced clams, drained        1 c coarsely crushed soda crackers
 4 T finely chopped onion                 ¾ c fresh bread crumbs
 3 T finely chopped parsley               ½ c heavy cream 
 1 tsp Worcestershire sauce               2 T soft butter, cut into small
 ½ c melted butter                          bits
 Salt

Preheat the oven to 375°. In a large mixing bowl, combine the clams, onion, parsley, Worcestershire sauce, melted butter, salt and a few grindings of black pepper. Stir in the crushed soda crackers and ½ cup of the fresh bread crumbs, pour in the cream and mix together gently but thoroughly. Taste for seasoning. Transfer the mixture to a lightly buttered 1-quart casserole and sprinkle the remaining bread crumbs over the top. Dot with the 2 tablespoons of butter and bake in the center of the oven for about 25 minutes, or until the crumbs are lightly brown. For a crisper, browner crust you may, if you like, slide the casserole under a preheated broiler for 30 seconds or so. Serve as a first course or luncheon dish directly from the casserole. Serves 4 to 6.
