Rice Allemande
Mom's Danish Traditional Christmas Dessert

This was contributed by "Buskboy", who is a great cook in his own right (or so he tells us *grin*). His family is Danish and he says this is one of their favourite desserts.

Ingredients

1 cup short grain Rice
1 quart milk 4-5 cups
4-6 tbls sugar (I would use more)
� tsp. salt
1 tsp. vanilla
1 envelope gelatin
1 pint whipping cream (whipped)

Cook rice in the milk until tender.Add salt, sugar and vanilla. Prepare the gelatin as per instructions, add to rice and let stand to cool. Allow to reach consistency between cooling and beginning of gelatin setting. (Important: do not let gel set; Dad fills the sink with cold water and leaves the pot to cool there. Keep a very close eye on it, stirring occasionally to avoid skin forming on top.)Fold cream into rice. ( Timing is important. Doing this too early will result in liquid in the bottom, and waiting too long will cause lumpiness. Garnish with whipped cream flowers & cherries. Refrigerate. Serves way too much.

**A fun game especially for children at Christmas. Have a box of chocolates wrapped as a present beforehand. Mix ONE SINGLE Almond into the dessert. Whoever gets the Almond in their serving gets the "Almond Present", and the only rules are no digging for it, and don't swallow it! The winner must have proof. In our cruel family we always wait until everyone's stuffed themselves before someone admits to have been hiding it in their cheek or slipped it into their lap.**

CRANBERRY BREAD

This recipe was donated by Kimm. I put it here in the Dessert category, but it would also be nice to use along with your main course. Enjoy!

Ingredients

2 cups all purpose flour
3/4 cup sugar
2 tsp Baking powder
1 tsp Salt
1/2tsp Baking soda
1/4 cup Shortening
2 Eggs beaten
3/4 cup Orange juice
1 tbsp Grated orange rind
1 cup Coarsely chopped cranberries
1/2 cup Chopped glazed green cherries
1 tbsp All purpose flour

Preheat oven to 350F. Combine flour, sugar, baking powder, salt, baking soda.Cut in shortening until mixture resembles coarse cornmeal. Combine beaten eggs, orange juice, rind; pour all at once into dry ingredients, mix enough to dampen. Dust chopped cranberries & cherries with flour & fold into batter. Pour into well- greased 9"x5" loaf pan. Bake 60-65 minutes, or until toothpick inserted in centre comes out clean. Cool in pan 10 minutes,remove, cool on rack. When loaf is completely cooled,wrap in aluminum foil,& store overnight for easy slicing. Yield:1 loaf

PECAN PIE

This is my friend Willi's fave dessert. Thanks for donating it Willi, and thanks for baking it for him, Katush!

Ingredients

4 eggs
1/4 cup melted butter
1/4 teaspoon salt
1-1/4 cups light corn syrup
1-1/4 cups firmly packed brown sugar
1 teaspoon vanilla extract
1 unbaked 9-inch pie shell
1 cup chopped pecans

Beat eggs with a wire whisk or fork. Add salt, butter, syrup, sugar and vanilla; mix well. Pour into pastry shell; sprinkle with pecans. Bake at 350�F for 45-50 minutes. Yield: One 9-inch pie.

FIVE MINUTE FUDGE

Another recipe sent by Kimm, whom I thank very much for helping me out so kindly with this. I sincerely hope if I am ever in Montreal, that I will be invited to her place for supper!:-)

Ingredients

1 2/3 cup sugar (400 ml)
2/3 cup undiluted Carnation Evaporated Milk (150 ml)
2 Tbsp butter (30 ml)
1/2 tsp salt (2 ml)
2 cups miniature marshmallows (500 ml)
1 1/2 cups semi-sweet chocolate chips (375 ml)
1/2 cup chopped walnuts-optional (125 ml)
1 tsp vanilla (5 ml)

Combine sugar, evaporated milk, butter & salt in medium saucepan. Cook & stir over medium heat until mixture comes to a boil. Boil 4-5 minutes stirring constantly. Remove from heat. Stir in marshmallows, chocolate chips, nuts(optional) & vanilla. Stir vigorously until marshmallows melt & blend. Pour into foil-lined 8 inch(2 L) square cake pan. Chill. Cut into squares. Store in refrigerator. Makes about 2 lbs(1 kg)
