Soft and Chewy Pita Bread
My own Pita recipe: 1-1/3 cup warm water 2 tsp yeast 1 tsp sugar Proof this in a bowl ( I do this in my Kitchen Aid work bowl) Add: 1/4 tsp salt 2 tsp veg oil (optional) 3-1/2 cups bread flour Adjust flour and water if necessary, knead about 15 mins (less if by hand, and you give up). Place in a plastic bag and allow to sit in fridge 4 hours or overnight. Using a floured board, separate the dough into pieces (about 6) and roll out into a circle making the dough as thin as you reasonably can. The circles should fit into a frying pan, which should be preheating over medium heat. Once pan is hot, pour enough oil into pan to coat, pouring excess off. 'Fry' bread dough 1 piece at a time, until golden on each side, they will brown quiclky, and bread may puff up. It should be checked after a couple minutes. Do not burn the bread, turn frequently until a nice color developes. | |
