Soft and Chewy Pita Bread

This is a chewy, soft pita bread that makes a great sandwich even better. Top with lettuce and grilled chicken, maybe some dressing or honey mustard sauce. Try tuna salad, even the turkey and olive salad found in the archives.

My own Pita recipe:

1-1/3 cup warm water
2 tsp yeast
1 tsp sugar
Proof this in a bowl ( I do this in my Kitchen Aid work bowl)

Add:
1/4 tsp salt
2 tsp veg oil (optional)
3-1/2 cups bread flour

Adjust flour and water if necessary, knead about 15 mins (less if by hand, and you give up). Place in a plastic bag and allow to sit in fridge 4 hours or overnight. Using a floured board, separate the dough into pieces (about 6) and roll out into a circle making the dough as thin as you reasonably can. The circles should fit into a frying pan, which should be preheating over medium heat. Once pan is hot, pour enough oil into pan to coat, pouring excess off. 'Fry' bread dough 1 piece at a time, until golden on each side, they will brown quiclky, and bread may puff up. It should be checked after a couple minutes. Do not burn the bread, turn frequently until a nice color developes.
