Ham
Roll-Ups
about 10 slices of ham from the deli
about 1 1/2 C. shredded Munster or Swiss
cheese
1/4 C brown sugar
1 C. pineapple juice
Take each slice of
ham
and put about 1-2 Tbsp. of cheese in the
center and
roll up. Secure with toothpicks. Put rolls
in
shallow baking dish and pour pineapple juice
on top.
Sprinkle with brown sugar and bake at 350' for
15
minutes or till hot.
Hungarian Meat Cubes
And
Noodles
meat
cubes or
round steak, cubed
1 (8 oz.) can tomato
sauce
2 . water
1/4 C. vinegar
cooked wide noodles
onion powder to
taste
1/4 C. brown sugar
1/2 tsp. salt
1 1/2 tsp. dry mustard
1 1/2 tsp. Worchestershire sauce
1/4 tsp. paprika
In a dutch oven, brown meat in a small amount
of oil.
Combine remaining ingredients except the
noodles.
Pour over the browned meat cubes. Cover and
simmer
till tender, about 1 1/2 hours. Make noodles
as
directed and serve with meat cubes and sauce
on
top.

Beef
Stroganoff
meat
cubes
or round steak, cubed
1 C. beef broth
hot cooked noodles
1 C. sour cream
3 Tbsp. flour
1/2 C. finely chopped onion
In a large skillet, brown meat and onions in a
small
amount of oil. Cook till meat is done. Whisk
together sour cream, broth, and flour. Pour
over
meat cubes, cover, and simmer (don't boil) for
5
minutes. Make noodles as directed. Serve
meat and
sauce over noodles.
Sauteed Chicken And
Tomatoes
4 boneless, skinless chicken breasts
1/4 tsp. salt
1 shallot, sliced
1 clove of garlic minced
1 thinly sliced tomato
1/2 C shredded Mozzarella cheese
1/4 C. minced red onion
1 Tbsp. fresh basil, minced
Rinse
chicken and
pat dry. Sprinkle with salt. Heat a small
amount of
oil in a skillet. Add chicken, shallots and
garlic.
Cook about 8 minutes or till chicken is done,
turning once. Place a tomato slice on each
piece of
chicken, top with minced red onion, and
sprinkle with
basil and cheese. Cover skillet and heat till
cheese
melts. Serves 4.
Tarragon Chicken With Bow
Tie
Pasta
8 oz. bow tie pasta
4 boneless, skinless chicken breasts
1 Tbsp. oil
1 tsp. minced roasted garlic or fresh
garlic
1/4 C. freshly grated Parmesan cheese
1 tsp. dried tarragon
1/2 C. chicken broth
2 Tbsp. butter cut in small chunks
Boil
water
for the pasta. Cut chicken in strips. Heat
oil in a
large skillet and brown chicken. Add broth,
garlic,
and tarragon. Cook 30 seconds, then cover and
simmer
for 5 minutes or till chicken is cooked
through.
Meanwhile make pasta as directed and drain.
Add
pasta to chicken in skillet. Dot with butter
and
toss. Serve with Parmesan cheese sprinkled on
top.
Crunchy Salsa
Chicken
1 C. honey flavored wheat germ
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. ground cloves
1/4 tsp. salt
1/4 tsp. cayenne pepper
2 egg whites
1 Tbsp. water
1 tsp. cumin
Boneless, skinless chicken pieces
salsa
Preheat oven to 400'. Spray a baking sheet
with
cooking spray. In a bowl mix the wheat germ,
spices,
cumin, salt, and cayenne. In another bowl mix
the
egg whites and water till frothy. Dip chicken
in egg
white mix, then in wheat germ mix. Coat
thoroughly.
Arrange on baking sheet. Spray chicken with
cooking
spray and bake 30 minutes or till done. Serve
with
salsa.
Sauteed
Pork And Cheddar
lean pork pieces
onion powder to taste
salt to taste
1/2 C. shredded Cheddar cheese
Heat a small amount of oil in a skillet.
Brown pork
and season with onion powder and salt. When
meat is
done, sprinkle with Cheddar, cover skillet and
heat
till cheese is melted.
Crock Pot Roast
Beef
beef roast
(I
like chuck)
1 (8 oz.) can tomato sauce
1/3 C. brown sugar
1/4 C. ketchup
1/4 C. vinegar
2 Tbsp. prepared mustard
1 or 2 cloves garlic, minced
a few dashes of Worchestershire
sauce
Put beef
roast in crock pot. Mix remaining ingredients
and
pour over top. Cover and heat low for 8-10
hours.
My
Favorite
Steamed Shrimp
1 1/2
lbs. raw shrimp
1 1/2 C. water
1 1/2 C. white vinegar
1 Tbsp. Kosher salt
3 Tbsp. Old Bay Seasonings
1 tsp. celery seed
Put water and
vinegar in
the
bottom of steamer and bring to a boil. Mix
salt,
celery seed, and Old Bay. Put half of the
shrimp in
the steamer basket and sprinkle half of the
seasoned
salt mix over top of shrimp. Top with
remaining
shrimp and sprinkle with remaining seasoned
salt mix.
Put into steamer, cover and steam 15 minutes
or till
shrimp peels easily. Don't let steamer boil
dry!
