ZUCCHINI CAKE

  • 2 cups sugar
  • 1 cup salad oil
  • 3 eggs
  • 2 cups flour
  • 2 cups garted zucchini
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 3/4 cup oatmeal
  • 1 cup chopped pecan
Directions
  • Combine sugar, oil, eggs, flour, zucchini, vanilla and mix well.
  • Add salt, baking soda, baking powder and oatmeal.
  • Mix until well blended.
  • Fold in nuts.
  • Spoon into greased jelly rollpan
  • Bake at 350 degrees for 20 minutes or until done.

 Frosting
  • 1/2 cup margarine
  • 6 oz cream cheese
  • 1/4 tsp almond extract
  • 1 tsp vanilla
  • 1 1/2 cups powdered suagr

Mix together and frost cake when it's been cooled.

Rhubarb Pie

  • 1 1/2 cup sugar
  • 1/4 cup flour
  • 3 eggs (slightly beaten)
  • 4 cups rhubarb (1 inch slices)
Directions
  • Combine the sugar, flour and eggs.
  • Add in rhubarb
  • Place in 9 inch unbaked pie crust
  • Bake at 450 for 15 minutes,
  • Lower to 350 for 45 minutes
    .
Do you remember springtime on the farm with Grandma's
rhubarb pie, made in her special pie tin,with scalloped edges?

Strawberry Dessert

  • 1 (3 oz) box strawberry jello
  • 1 cup water
  • 1/2 cup sugar
  • 3 Tbsp cornstarch
  • 1 quart strawberries
  • 1 (9 inch) pie shell, baked
  • cool whip
Directions
  • Mix the jello, water, sugar and cornstarch
  • Cook until thinck
  • Cool slightly then stir in strawberries
  • Pour into baked pie shell
  • Chill until set (several hours)
  • Top with cool whip
A nice summertime dessert, just in time for those
fresh strawberries.
