Try these delicious creations!

Pasta Carbonara

pasta for 4-6 people
2 tbsp olive oil
8-12 slices bacon
1 medium onion
lots of garlic
1/2 cup white wine (optional)
black pepper to taste
4 eggs
1 cup parmesan cheese

Cook pasta until nearly done, drain, and toss with 1 tbsp olive oil. Cooked chopped up bacon until just crispy and remove to plate. Drain all but 2 tbsp fat, add 1 tbsp olive oil and cook chopped onion until translucent. Add garlic and cook 1 minute more. Add wine and cook for a few minutes. Return bacon to pan to warm up. Toss contents into pasta until hot. Add four scrambled eggs, tossing constantly, then add parmesan cheese, still tossing. Reserve some cheese for toping. Serve immediately while still warm.

Breaded Chicken Breasts

2-3 chicken breasts
1/2 cup milk
1/2 cup bread crumbs
1/2 cup dried parmesan cheese
1/4 tsp garlic powder
1/4 tsp black pepper

Remove tenders from breasts and cut remaining breasts in half lengthwise to make them thin. This makes 3 pieces of chicken from each breast. Combine dry ingredients in shallow bowl. Dip chicken pieces in milk then coat with crumb mixture. Arrange on cookie sheet. Bake at 350 degrees for 10-12 minutes.

Roasted Tomatoes with Shrimp and Feta

5 large tomatoes cut into eights
3 tbsp olive oil
2 tbsp garlic, minced
3/4 tsp salt
3/4 tsp black pepper
1 1/2 lb shrimp
1/2 cup basil, chopped
2 tbsp lemon juice
1 cup feta cheese, crumbled

Preheat oven 450 degrees. In bowl, place tomatoes, olive oil and garlic. Mix well. Spoon tomato mixture into four individual baking dishes, such as onion soup bowls. Sprinkle with salt and pepper. Roast 20 minutes. Stir in shrimp, basil and lemon juice. Sprinkle with feta. Bake another 10-15 minutes or until shrimp is cooked. Serve warm with crusty bread for dipping.
