HOLIDAY RECIPES




BACON WRAPS - Mom
1 loaf soft white bread
1 can cream of mushroom soup
grated parmesan cheese
1 pound thin sliced bacon
Remove crusts from bread and roll with rolling pin to squish. Spread on cream of mushroom soup, and sprinkle with parmesan cheese. Roll up and wrap with bacon, securing with toothpicks. Slice into bite size pieces. Bake at 350 degrees long enough to thoroughly cook bacon. Serves 12-16.


CHEESE BALL - Aunt Gladys
1 8-ounce package cream cheese
1 jar Kraft Old English spread
2 tablespoons Roquefort cheese
Combine all, and mix thoroughly. Shape into ball and roll in chopped pecans or dried parsley. Best served with Triscuits or cocktail rye bread. Serves 20




CHICKEN TETRAZZINI - Mag
This is a nice dish to make for company. It's rich and very elegant.
6 tablespoons butter
6 tablespoons flour
salt
dash nutmeg
2 cups milk
1 cup chicken broth
2 egg yolks
1/2 cup heavy cream
1/4 cup dry sherry
8 ounces thin spaghetti
3 cups chunked chicken or turkey pieces
6 ounces mushrooms
1 cup grated sharp Cheddar cheese
Melt butter and remove from heat. Stir in flour, 1 1/2 teaspoons salt, and nutmeg until smooth. Gradually add milk and chicken broth. Bring to boiling, stirring constantly. Boil 2 minutes, or until slightly thickened. In small bowl, whisk egg yolks with cream. Beat in a little of the hot mixture. Pour back into saucepan; cook over low heat, stirring constantly, until sauce is hot. (Do not boil.) Remove from heat, stir in sherry.
Boil spaghetti and drain. Combine all but cheese in 12x8x2-inch lasagna dish. Sprinkle cheese on top. Bake, covered, 45 minutes in 350 degree oven. Serves 6.



SHRIMP AND RICE AU GRATIN - Mom
1 1/2 tablespoons butter
1 tablespoon flour
1 1/2 cups milk
1/2 pound Velveeta
1/2 teaspoon salt
1 teaspoon curry powder
dash of paprika
2 cups cooked shrimp
1 cup cooked rice
1 cup soft, fine bread crumbs
Melt butter and add flour, blending well. Add milk and stir gradually, cooking until thickened. Add half of cheese, cubed, and spices, stirring constantly until cheese is melted. Mix shrimp and rice in, and place all in greased baking dish. Sprinkle with crumbs and cover with remaining cheese. Bake at 350 degrees for 15 minutes or until crumbs are browned and cheese is melted. Serves 6-8.



BAKED MASHED POTATOES - Bonnie
1 box Potato Buds (small box, make according to package directions, except a little less water)
Add to this:
2 tablespoons chopped onions
1 tablespoon chopped parsley
1 4-ounce tin whipped cream cheese
1 egg
Place in buttered casserole. Pat with butter, sprinkle with paprika. Bake uncovered at 350 degrees for 35 minutes. Serves 4



PECAN STICKS - Mom
1/2 pound butter
4 heaping teaspoons XXX sugar
1 teaspoon vanilla
2 cups flour
1 cup finely chopped pecans
Mix together. Chill at least 1/2 hour. Take small pieces of dough and shape into ovals. Bake 30 minutes at 275 degrees. Roll in XXX sugar while still hot. Makes 2 dozen



SPRITZ COOKIES - Mom
1 1/2 cups butter
3 1/2 cups flour
1 cup sugar
1/2 teaspoon almond extract
1 egg
1 teaspoon baking powder
1 teaspoon vanilla
dash salt
Beat butter until creamy. Add 1 cup of the flour, the sugar, egg, baking powder, vanilla, and almond extract. Beat until thoroughly mixed. Add remaining flour and mix until smooth. Force unchilled dough on cool cookie sheet. Bake at 375 degrees for 8-9 minutes. Makes 3 dozen.



MAYONNAISE CHOCOLATE CAKE - Mom
This is a wonderfully moist cake. It's the one we always asked for on our birthdays!
2 cups sifted cake flour
1 cup granulated sugar
2 tsp baking soda
2 squares chocolate
1/4 teaspoon salt
1 cup Hellmans mayonnaise
1 cup cold water
1 teaspoon vanilla
Combine and sift together into a bowl the cake flour, granulated sugar, baking soda, and salt. Add chocolate, mayonnaise, water, and vanilla. Blend well. Pour batter into 2 greased 8-inch cake pans. Bake about 30 minutes at 350 degrees.
Add 3 squares melted chocolate to 1 stick butter softened in bowl. Add one box XXX sugar gradually, and 1 teaspoon vanilla for frosting. Makes 1 cake.



OLD FASHIONED CHEESECAKE - Mag
This one's a lot of work. Takes all day, but it is absolutely heavenly! I only make it once a year.
1 cup plus 3 tablespoons flour
2 cups sugar
1 lemon
1 orange
1/2 teaspoon vanilla
8 eggs
1/2 cup unsalted butter
5 8-ounce packages cream cheese, softened
1/4 cup whipping cream
Combine 1 cup flour, 1/4 cup sugar, 1 teaspoon lemon peel, and 1 teaspoon orange peel. Cut in butter until mixture resembles coarse crumbs. Add 1/4 teaspoon vanilla, 1 egg yolk; stir until all flour is moistened. Make into ball; refrigerate, wrapped in waxed paper, 1 1/2 hours.
Roll dough on lightly floured surface to 1/8 inch thick; trim to 10-inch circle. Reserve pastry trimmings. Press pastry circle into bottom and 1/2 inch up side of 9x3 inch buttered spring form pan. Refrigerate 1 hour. Heat oven to 400 degrees. Bake pastry until light brown, about 20 minutes. Cool on wire rack 15 minutes.
Beat cream cheese, 1 3/4 cups sugar, 3 tablespoons flour, 1 1/2 teaspoon lemon peel and 1 1/2 teaspoon orange peel in large mixer bowl or Cuisinart on medium speed, about 5 minutes. Stir in cream.
Increase oven temperature to 500. Roll out reserved pastry trimmings on lightly floured board; cut into 2 inch strips. Pat strips up side of pan, pressing dough lightly to baked crust. Pour filling into prepared crust, bake 10-15 minutes.
Reduce oven temperature to 200 degrees. DO NOT OPEN OVEN DOOR. Bake until cheesecake is firm in center, about 50 minutes. Turn off oven; leave cheesecake in oven with door slightly open 1 hour. Remove; cool completely on wire rack. Refrigerate at least 2 hours. Remove pan sides before serving.
Serves 10



SPICE CAKE - Mom
1 cup water
1/3 cup lard
1/4 teaspoon cloves
1 teaspoon cinnamon
1 cup sugar
1 cup raisins
1/4 teaspoon mace
Cook all 3-4 minutes. Chill. Add 1 cup flour with 1 teaspoon baking powder, mix. Then add 1 cup flour with 1 teaspoon baking soda, and 1/2 teaspoon salt. Mix and bake in 8x11 pan, 325 degrees for 30 minutes. Use vanilla frosting.



UNDER THE BROILER COCONUT CAKE - Mom
1 cup sugar
1 teaspoon vanilla
2 eggs - beat these three ingredients well.
1 cup flour
1 teaspoon baking powder
1/2 cup milk
1 tablespoon butter (melt butter in hot milk).
Bake in 350 degree oven about 25 minutes.
Topping:
6 tablespoons brown sugar
2 tablespoons butter
2 tablespoons cream or milk
1/2 cup coconut
Spread on top and put under broiler until it caramelizes.
