Sausage,Peppers&Potatoes
1 to 2 packs of mild Italian sausage
2 green bell peppers sliced thin
3 to 4 onions sliced thin
8 to 10 potatoes
Boil the potatoes until fork tender(do not overcook them). While these are boiling fry the green bell peppers in olive oil until tender; add the onions and cook until those are tender too. While the peppers and onions are cooking cook the sausage until done through.
When potatoes are done cool,peel and cut into 1/4's and set aside.
When sausages are done slice them into bite size pieces and set aside. Save the grease from the sausage and add the potatoes to this and let cook long enough for flavors to blend. When this in done place everything in a large pot and mix well and let heat until hot.

Hot Fish Dish
1 pound of cod fish (fresh or frozen)
1 small jar of cherry peppers
10 cloves of fresh garlic chopped
olive oil
Boil the fish for 5 minutes, drain and let cool. While fish is cooling, saute' chopped garlic in a little bit of olive oil(I use enough to cover the bottom of skillet); saute' for 1 to 2 minutes. Do not overcook the garlic! Cut and seed about 5 cherry peppers and add to the sauted' garlic; break fish into pieces and add that to the garlic/pepper mixtuer in the skillet.
Cook for 5 to 10 minutes and serve on a platter!
My mom serves this dish on Christmas Eve, everyone loves it!!
Stuffing For Turkey
1 pound of lean ground beef
1 to 2 cups of hot cooked white rice
1 to 2 apples cored,peeled and diced
2 stalks of celery sliced or chopped
2 onions chopped
6 to8 chestnuts roasted and chopped
salt to your taste
pepper to your taste
Brown the ground beef and drain grease off. Place in a large mixing bowl
add the celery, apples, onions,cooked rice, and chestnuts;season with
salt and pepper mix well.
Stuff your holiday turkey with this.

Holiday Ham
1- 5 pound canned ham
brown sugar
honey
crushed pineapple(reserve juice)
maraschino cherries
cloves
Score the ham and stud with cloves. Pour the pineapple juice on the
bottom of the pan(may use canned pineapple juice if needed). Pack
the brown sugar on top of the ham and top with the honey, crushed
pineapple, and cherries.
Bake at 325 degrees for 1-1 1/2 hours or until done!
Hidden Valley Ranch Stars
2 cups of cooked crumbled sausage
1 1/2 cups of grated sharp cheddar cheese
1 1/2 cups of shredded Monterey jack cheese
1 cup of *Hidden Valley Ranch Dressing
1 can of sliced black olives (2.25 oz size)
1/2 cup of chopped red bell pepper
1 package of fresh won ton wrappers
Brown the sausage and drain the grease off. Chop the olives into
small pieces.
Mix all the ingredients together in a bowl ; except the won tons!
Place the won ton wrappers in a muffin tin, brush lightly with oil;
form into a star and brown lightly.(375 degrees)
When the won tons are lightly browned remove from the oven and
add about 1 tablespoon of the mixture to them and bake at 375 for
20 minutes or until hot and bubbly.
When serve this at all the get-togethers and everyone loves them!!!
Eggs and Sausage Casserole
6 eggs beaten
2 cups of milk
6 slices of bread cut into cubes
1 cup of shredded cheddar cheese
1 teaspoon of salt
1 teaspoon of dry mustard
1 pound of fresh bulk sausage
Brown the sausage and drain the grease.
Place the sausage in a greased baking dish; add the eggs and the
remaining ingredients.
Bake at 325 degrees glass pan 45 minutes.
Bake at 350 degrees metal pan for 45 minutes.
Worcestershire Butter Sauce
1/2 cup of butter
1 tablespoon of chopped parsley
2 tablespoons of lemon juice
1 1/2 teaspoons of *Lea&Perrins Worcestershire Sauce
1/8 teaspoon of salt
In a saucepan melt the butter. Stir in the remaining ingredients. Heat
thoroughly. Serve over fish or vegetables.
Pizza Cups
3/4 pound of lean ground beef
2 tablespoons of chopped onion
1/2 teaspoon of salt
3/4 cup of shredded mozzarella cheese
6 ounce can of tomato paste
1 teaspoon of Italian seasoning
1 can of biscuits
Press the biscuits into a muffin tin. Brown the ground beef and the onions until tender;add the seasonings and mix well. Drain off the grease. Top the biscuits with the tomato paste;add the ground beef and top with the cheese. Bake at 350 degrees for 15 minutes or until the cheese is melted.
Bean Dip
1 pound of pinto beans
1 to 2 onions chopped
1 package of taco seasoning mix
1 cup of shredded cheddar cheese
Soak beans overnight and remove bad beans. The next day cook the
beans in water;cook until there is just a little water left.
Mash the beans and stir in the package of taco seasoning mix.
Place in a baking dish and top with grated cheese; bake/heat in a
325-350 degree oven until cheese is melted and hot.
This is good but I have not made it for several years.
Orange Julius
1/2 of a 6 ounce can of frozen orange juice
1/2 cup of milk
1/2 cup of water
1/4 cup of sugar
1/2 teaspoon of vanilla
6 ice cubes
Place all of the ingredients listed in a blender and blend until smooth.
Serve immediately.
Chex Party Mix (microwave)
1/2 cup of butter
1 1/4 tablespoons of seasoned salt
4 1/2 teaspoons of worcestershire sauce
2 3/4 cup of *Corn Chex Cereal
2 3/4 cup of *Rice Chex Cereal
2 3/4 cup of *Wheat Chex Cereal
1 cup of mixed nuts
(I like to add some pretezels to)
In a 4 quart bowl melt the butter in the microwave on high for about 1 minute. Stir in the seasoned salt worcestershire sauce. Slowly add the cereal and the nuts; mix well. Microwave on high for 6 minutes; stirring every 2 minutes.
Lipton Onion Butter
1 package of *Lipton Onion Soup Mix
1/2 pound of butter, softened
Blend together the onion soup mix and the butter. Store in a container and keep in the refrigerator.
*Great on bread and potatoes!
Cheese Dip
2 packages of cream cheese; softened
2 packages of sliced beef; chopped fine
garlic powder or garlic salt to your taste
dried minced onion to your taste
Mix all the ingredients together well, chill and serve with crackers.
Sweet & Sour Little Sausages
1 cup of brown sugar
3 talbespoons of flour
2 tablespoons of dry mustard
1 cup of pineapple juice
1/2 cup of vinegar
1 1/2 tablespoons of soy sauce
3-4 packages of little smoked sausages
Combine all the ingredients together except the sausage. Bring to a boil and let boil for 1 minute; add the sausages and cook slow until warm enough to serve!
Green Bean Bake
2 pounds of ground beef (browned and grease drained off)
2 cans of french style green beans (drain liquid)
1 can of cream of mushroom soup
1 can of cream of chicken soup
1/2 bag of tator tots
salt and pepper to your taste
1 package of dry onion soup mix
Brown the ground beef and drain of the grease; place the green beans in the bottom of a casserole dish. Add the ground beef, onion soup mix, cream soups and bake at 350 for 30-40 minutes; during the last 15 minutes of baking time place the tator tots on top.
Best Ever BBQ Ribs
1 slab of baby back ribs
1 bottle of your favorite BBQ sauce
water
Place the ribs in a roasting pan and cover with equal amounts of water and BBQ sauce. Bake in the over at 325 degrees for 1 hour. Discard the sauce, grill the ribs over hot coals and brush with BBQ Sauce until done! These are wonderfull!
