APPLE-CHEDDAR MUFFINS

1/2 cup shortening
1 cup sugar
2 eggs
1-1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3/4 cup oatmeal
1 cup grated apples
2/3 cup grated sharp cheddar cheese
1/2 cup chopped pecans
3/4 cup milk
sliced apple
melted butter
cinnamon sugar

Preheat oven to 400 degrees. Cream the shortening and sugar; add the eggs, one at a time, beating well after each addition. Stir together the dry ingredients. Gradually stir the dry ingredients into the shortening mixture. Stir in the apples, cheese and pecans, mixing well after each addition. Gradually add the milk, stirring just until blended. Spoon into greased or paper-lined muffin tin, filling each cup 2/3 full. Cut an apple into thin slices. Dip each slice in melted butter, then into cinnamon sugar. Press one apple slice onto the top of each muffin. Sprinkle lightly with cinnamon sugar and bake for 25 minutes until golden brown.
