SEAFOOD QUICHE

2 Tbs finely chopped shallots
3 Tbs butter
1 cup cooked shrimp, crab, or lobster
2 Tbs sherry
3 eggs
1 cup half & half
8" pie crust, unbaked
1/4 cup grated Swiss or Gruyere cheese

Preheat oven to 375 degrees. Cook the shallots in the butter over medium heat until tender. Add the seafood and continue cooking for 2 minutes, stirring frequently. Add the sherry, and salt & pepper to taste, and cook for an additional minute. Remove from the heat and allow to cool a little. Beat the eggs and the half & half together in a bowl and add the seafood mixture, stirring to combine well. Pour this mixture into the pie crust and sprinkle the cheese on top. Bake for 25 to 30 minutes, until the quiche is puffed and brown.
