2 10oz pkgs frozen broccoli
1/4 cup butter
6 T flour
1/2 tsp salt
dash of pepper
2 cups chicken broth
1/2 cup heavy cream
3 T dry white wine
6 chicken breasts
1/4 cup parmesan cheese, grated
Cook broccoli as directed on the package; drain. Melt butter in a small saucepan over medium heat. Blend in flour, salt, and pepper. Add the chicken broth, and stir until the mixture
thickens and bubbles in the saucepan. Add cream and wine; stir. Reduce heat to simmer, and stir occasionally until the sauce thickens just a bit. Brown chicken breasts in olive oil for 8-10 minutes. Place broccoli in a 13x9" baking dish. Pour half the sauce over the top of the broccoli. Place chicken breasts on top of the broccoli. Add the parmesan cheese to the remaining sauce, then pour over the top of the chicken. Sprinkle with additional Parmesan cheese, if desired. Bake in a pre-heated 350 degree oven for 20-25 minutes, or until heated through.
