Mini Gingerbread Houses


These mini houses are easy to assemble, and fun to decorate! No baking involved! My kids like to make a bunch every year to put on our cookie trays.

For each house you'll need
  • 4 whole graham crackers
  • royal icing
  • candies etc. for decorating (M&M's, pretzels, gumdrops...)
Cut 2 crackers as shown in figure 1. Discard the shaded areas. These will be the front and back of the house. Break each of the remaining crackers into 2 squares along the perforation on the cracker. You'll use 2 of the squares for the sides, and 2 for the roof. Assemble using royal icing as shown in figure 2. Let dry overnight. Use more royal icing to attach candies for decorations. Let dry for 24 hours. After drying these are very sturdy, and make nice gifts from the little ones to grandparents.
