"A Ranch for all Seasons"

 

The Burgess Family established our home and ranching operation on 149 acres in South Central Kentucky in June 2005. We purchased 22 purebred Black Angus heifers and a registered Black Angus bull in April 2006. All calves offered as processed beef have been born and raised here on our ranch. They are all 11 – 14 months of age at the time of processing.  We do not purchase calves from other farms to sell for beef.

We began our family farm with the goal of providing healthier beef for our family, friends, and neighbors. We have experience in raising cattle and other livestock for over seven years.  We also raise all-natural, grass-fed sheep and goats for processing.

We adhere to the philosophy that cattle were created to graze pastureland. We move the herd frequently from one paddock to the next, simulating natural herding instincts. This provides fresh forage and facilitates natural parasite controls.

We do not broadcast any chemical herbicides, fertilizers, or pesticides on our pastureland. We do not administer any growth hormones, antibiotics, or steroids to our cattle. We do provide an all-natural mineral supplementation.

Because our cattle are not grain fed, there will be less fat marbling throughout the meat providing for very lean cuts of beef. We allow the calves to remain with their dams for natural weaning until processing as yearlings to enhance tenderness.

We patronize a privately-owned processing plant less than five miles from our farm. It is a very modern, clean facility built 5 years ago. The owner welcomes scheduled tours through his facility. He will age each beef at least 6 days and then seal the ground beef in tubes for storing up to one year and vacuum seal the steaks, roasts, patties and ribs in bags for a 3-year preservation period. The sealed cuts will remain on site, in a sub-zero freezer for 3 days to ensure they are frozen solid.

Our family here at Hidden Meadows Ranch considers our stewardship over the livestock a God-given blessing and opportunity. We welcome any individual or family interested in purchasing our beef or learning more about our ranch to tour the farm or stay with us in our Amish-built guest cabin in the meadow.
