Yummy Baking!!!


Another thing I can remember as a child, is all the BAKING my mother did. I aspire to be like her in the kitchen in everything I do, but I believe she will always be the best baker in this world!!! I have got a few recipes I would like to share with you on this page that are family recipes that have been handed down from one to the other in my family. I hope you and yours enjoy them as much as my family does!!! I will be putting seasonal recipes on here as well so watch for my all time favourites as the months go by...


~~Cherry Breeze Pie~~

This is a simple recipe, but ooohhh sooo good!!!
1 pkg. cream cheese, softened
1 can sweetened condensed milk
½ cup real lemon juice
1 graham pie shell, the extra serving size...Or you can make your own if you prefer!!!
Your choice of topping, I like to use dark bing cherries from the can or fresh strawberries when in season.

Whip the cream cheese and milk together till fluffy. Add the lemon juice and whip till it becomes nice and creamy. I find the longer you whip it the better the pie turns out! Fold the mixture into your pie shell and refridgerate for about an hour or so. I usually like to make this the night before I am going to serve it, for the longer it is in the fridge, the thicker it gets. Also, I place the fruit topping in a container and refridgerate as well before pouring on top of the pie. So when you are ready to serve the pie, pour your fruit topping over and Voila, Cherry Breeze Pie...YUM...

~~The Best Banana Bread~~

I like to double up on the ingredients and bake this bread in a large rectangle pan and then cut it into four sections and freeze three and slice and eat one section at a time. You do as you want though!!!*wink*
¾ cup sugar
½ cup margarine, softened
2 eggs
1 cup (2 medium) mashed bananas
1/3 cup milk
2 cups flour
½ cup chopped nuts, optional
1 tsp baking soda
½ tsp salt
Liberal amount of cinnamon ( I like this spice alot, so I use alot...*grins*

Heat oven to 350º and greese the bottom of your desired pan. Beat your margarine and sugar till fluffy and then add the eggs and do the same. Add the milk and bananas and blend well. In a smaller bowl combine all of your dry ingredients, including the nuts. Blend the two mixtures together until the dry ingredients are moistened. Pour into your greased pan and dust top with a little cinnamon. Bake and ENJOY!!!
