CHICKEN AND SAUSAGE GUMBO
- 1 pound smoked sausage in 1/4 inch slices
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped bell pepper
- 1 Tbsp. minced garlic
- 12 cups homemade chicken broth
- 1 cup dark roux
- 2 tsp. hot sauce
- 1 Tbsp. Emeril's creole seasoning
- all the chicken from the one used to make the broth, chopped
- 1/2 cup chopped green onion
- 1/4 cup minced parsley
- 4 cups cooked rice
Heat a soup pot over medium-high heat. Cook the smoked sausage till brown. Add the onion, celery, bell pepper, garlic and cook for 5 minutes. Add the broth and bring to a boil. Add the roux and simmer for 30 minutes. Add the hot sauce and additional essence and simmer for 30 minutes. Add the chicken and simmer for 10 minutes. Add the green onion, parsley and the rice.
