| Ingredients: | |
| 1/2 cups crushed potato chips | 1/4 Cup Parmesan Cheese |
| 1 tsp. ground Thyme | 1 pound snapper or grouper filets cut into strips |
| 1/4 Cup Milk | |
| 1.Combine potato chips, cheese, & thyme in a shallow dish. |
| 2.Dip fish in mile and dredge in potato chip mixture. |
| 3.Place fish in a single layer on greased baking dish. |
| 4.Bake at 500 for 8-10 minutes. |
| 5. Serve with Banana Salsa |

| Ingredients: | |
| 2 medium ripe bananas, chopped | 1/2C. Chopped green bell peppers |
| 1/2C. Chopped red bell peppers | 3 Green Onions |
| 1T.chopped fresh cilantro | 2T. Light brown sugar |
| 3T. Fresh Lime juice | 1T. Vegetable Oil |
| 1/4 tsp. Salt | 1/4 tsp. Pepper |
| 1 Small jalapeno pepper, seeded and chopped (optional) |
| 1.Combine all ingredients except jalapeno pepper. |
| 2.Stir gently. |
| 3.Add jalapeno pepper if desired |
| 4.Cover and refrigerate at least 3 hours. |
| Yeild:8 servings. |
