Sure, Jack was gaining! The probability that the mark comes up already at the first throw is  1/2, it pays off 1 dollar; the probability that it comes up after exactly 2 throws is (1/2)2, payment  4 dollars etc.

In average Jack gets summa dollars from Jim who only gets 5 dollars for each game. Thus Jack is gaining 1 dollar in average on each game! A "fair" fee would of course be 6 dollars per game.
